I can see some 3D designing and printing for a plastic handle, and possibly using the blades of real knives - in theory only one magnet would then be required (inside the box). One could even design a secret locking pin in the handle so that an audience member could see it's a "real" metal knife that doesn't collapse.

Given the setup it should be easy to calculate the correct lengths. I agree that it seems too long, but it's only a demo.
