In Thai green curry yes they use lemongrass and lime juice...In fact there are alot of Thai dishes where they use Lemongrass and Lime juice...Thai green curry and Pad Thai are my favourite Thai dishes.
adding rice with every spoonful from the start would have tapered some of the heat! you should have at least 3 pcs of caramel toffee candy (Kraft) every time you engage with super hot dishes!
