I never bothered to even do research on the sentry, so I just assumed it was able to have hidden detection.

Here's the list of the Remaining TF2 anims cuz i loved to continue it.
Scout : Since he used a blue skin instead of grey, yes. For the replacement of Heavy attacking scout, maybe a Templar could work.
Pyromancer : Now ya'll know pyro talks muffling, but instead wear his masks from his upgrades to look like he is pyro. Also i don't know what to do about The Enemies talking about him. Maybe it's basically fallen enemies.
Soldier : Now this may be hard to decide, He uses a shovel and a rocket, the TDS Soldier does not use a rocket, so either use Rocketeer or Soldier, My idea might be Soldier using a rocket, so idk.
Heavy : He is normal, same thing.
Demoman : Just basically the same stuff, again.
Now alot of ya'll might think "What about the spy? What will he even be?" Or something
So i might recommend the Cowboy should be Spy, Because nobody else could be as him, cuz either he could be Crook Boss. (Pretty weird for A father of Scout) Because the spy also uses revolvers.
Also Slasher could work because of his "backstabbing" knife.
