I had to sub red pepper flakes for the cayenne pepper and Tabitha Brown's Sweet & Smokey for the seasoning salt, and it came out just fine!!! He says one thing in the video, something else in the ingredients in the description, and something also differently in the recipe in the link. I just listened to the video when he said “do what you do” or “now is the time to add some seasoning or milk if you need” and most importantly!--“if it goes into the oven dry it’s going to be dry….if it goes in creamy it’s going to be creamy!” I listened to that and measured with my heart and it turned out SOOO amazing!

They’re doing it wrong if it’s grainy. I hate custard so I use roux but you have to cook the flour taste out and add the cheese with the heat OFF, gradually, then it’s super creamy. I have never had a grainy roux Mac and cheese all the years I’ve been making it, and it’s my family’s favorite. 😊

Thank you! I did not get my grandmother's recipe before she passed. The grandmother that I grew up with was not my mother's mother. She married my grandfather when my mother was in her 20s, so my mother didn't know the recipe either. Most recipes now use the roux method, but my grandmother always used the custard method. I'm going to make this for Thanksgiving! ❤
Ok let me tell you. I’ve been trying different recipes for Baked Mac & cheese and some have been successful. We were looking for a well seasoned and cheesy Mac & cheese. This is by far our favorite. I don’t even think we need to try anymore recipes. We followed every little thing you said and listed. This was it!

I also use evaporated milk, milk eggs, etc. but I learned something new today about doing the custard of the items and then adding it to the macaroni. That looks delicious. That's almost how I do mine except I melt my velveeta on the stove with evaporated milk, butter some of my shredded cheeses and make a cheese sauce in my pan I season the noodles with the same seasonings and add evaporated milk the scrambled eggs and shredded cheese then I add the cheese sauce stir and pop in the oven. When it's done I put slices of velveeta on top and let it melt down into the Mac.
The people who usually don’t use egg and milk make a rue. I was taught with egg and evaporated milk or half and half. I would never use velveeta. I was taught to use aged cheeses never use processed cheese. People are real sensitive and touchy about “their” Mac n Cheese. Everybody’s Grandma made the best. So take whatever you think is the best for you. I use butter, half n half, eggs, and evaporated milk and all aged cheese. Also shred your own cheese. (Oh and secret ingredient is white Vermont cheddar cheese) among the other aged cheeses… Pre shredded cheese doesn’t melt as well. Oh and the foil is to make sure the middle gets done. I put the foil on top loosely half way through cooking. He put his on at the beginning. Just my 2 cents. Hope you make great mac n cheese and get to eat great mac n cheese!!💜💜🫰🏾
Yeah, my grandma use eggs (from the West Bank) and I didn't like it, too stiff for me, so I use milk (sometimes condensed), butter, cheese to make a sauce over the stove, then put more cheese over the top in a baking pan, born and raised in Louisiana. It's just personal preference...sounds good.
I tried your way last night for Sunday dinner.. I've made M/c many times for years (it's good). I must admit, as the man of the house (who dose most of the cooking), bro... your way was delicious! even though I forgot the sour cream, It still was amazing. I will never buy the cheese in the bag again. Those few minutes to grade the cheese is worth it. I'm only old enough maybe (?) to be your young father, but bro, you gotz skillz... It’s just preference. ♥️ This chef also has another Mac Recipe on this channel without using Velvetta and it’s the exact recipe I use minus a few cheeses. I just shred mild cheddar, Colby Jack, and Extra Sharp by the brand Tillamook, sour cream, seasoning, a couple eggs… You could also add cream cheese which is so good too ♥️

Yours is very similar to mine. I always use assorted cheeses and I also do the layering. The only thing I don't use is the evaporated milk. Everything else is exactly the same. Great video 👍 thanks for sharing. Have a great day 🌞

I don’t understand why people use roux for mac and cheese or even queso. It gives the cheese a grainy texture no matter what. Use the custard people.

The people who usually don’t use egg and milk make a rue. I was taught with egg and evaporated milk or half and half. I would never use velveeta. I was taught to use aged cheeses never use processed cheese. People are real sensitive and touchy about “their” Mac n Cheese. Everybody’s Grandma made the best. So take whatever you think is the best for you. I use butter, half n half, eggs, and evaporated milk and all aged cheese. Also shred your own cheese. (Oh and secret ingredient is white Vermont cheddar cheese) among the other aged cheeses… Pre shredded cheese doesn’t melt as well. Oh and the foil is to make sure the middle gets done. I put the foil on top loosely half way through cooking. He put his on at the beginning. Just my 2 cents. Hope you make great mac n cheese and get to eat great mac n cheese!!💜💜🫰🏾

Yeah, my grandma use eggs (from the West Bank) and I didn't like it, too stiff for me, so I use milk (sometimes condensed), butter, cheese to make a sauce over the stove, then put more cheese over the top in a baking pan, born and raised in Louisiana. It's just personal preference...sounds good.

I tried your way last night for Sunday dinner.. I've made M/c many times for years (it's good). I must admit, as the man of the house (who dose most of the cooking), bro... your way was delicious! even though I forgot the sour cream, It still was amazing. I will never buy the cheese in the bag again. Those few minutes to grade the cheese is worth it. I'm only old enough maybe (?) to be your young father, but bro, you gotz skillz... I like you/your videos, because you get right to it. Great job!

It’s just preference. ♥️ This chef also has another Mac Recipe on this channel without using Velvetta and it’s the exact recipe I use minus a few cheeses.
I just shred mild cheddar, Colby Jack, and Extra Sharp by the brand Tillamook, sour cream, seasoning, a couple eggs… You could also add cream cheese which is so good too ♥️

Yours is very similar to mine. I always use assorted cheeses and I also do the layering. The only thing I don't use is the evaporated milk. Everything else is exactly the same. Great video 👍 thanks for sharing. Have a great day 🌞
