Watermelon Tuna

  • This is of course, not actually tuna. It's a vegan version using watermelon... I know sounds crazy right? But the texture is surprisingly similar to fish. Marinated in the right ingredients this meat free alternative to a poke style tuna is great on rice, in poke bowls, in salads and anywhere else you'd normally use tuna.

    For Tuna:
    In a large plastic bag place
    1,500 grams of cubed watermelon (will reduce to 1/3-1/4 of the size after cooking)
    5 grams of sesame oil
    50 grams of soy sauce
    2 grams of crushed chili flakes
    2 grams of nori seaweed flakes (provides the taste of the "sea" that the watermelon is missing)
    30 grams of a neutral oil
    Let set in fridge for 6 hours. Feel free to make adjustments to the marinade (ie. adding hot sauce, ginger, garlic etc...).
    After 6 hours, place the watermelon cubes onto a parchment lined baking sheet. Reserve marinade in order to create a sauce. Cook watermelon for 180 degrees Celsius or 350 degrees Farenheit for about 1 to 1.5 hours. Stir occasionally.
    For sauce:
    Place leftover marinade in a bowl with crushed garlic and add more soy sauce.
    While still warm, coat watermelon tuna in bowl of marinade and fold until coated evenly.
    For coating:
    In a small bowl, place black and white sesame seeds, mix together.
    Place watermelon tuna that has been covered in marinade sauce and serve with a bowl of rice, salad with spicy peanut butter sauce, or poke bowls.

    I tasted this watermelon tuna in Zuna beach club in Santa Teresa, CR. It's so delicious! I've never heard about that but this is my favorite meal now.

    Glad to see you back. Another awesome post with a great new twist on watermelon. It's summer Down Under and watermelons are everywhere. Have you got anything with paw paws like this?

      @@ChefStudioChannel It's firmer than water melon not as firm as honey few. Probably like peach. It's not too sweet and takes on other flavours easily. The Thais make great chilli salad with the green ones.

      It’s very similar to tuna honestly, obviously regardless of seasoning etc you can tell that it isn’t but in the context of a larger dish like a poke bowl, you dont even notice. Its crazy

    The way it looks really makes me think of a thing I saw before, smoked watermelon.
    Also, have you got any clue what makes this work texturally? Watermelon is normally very crispy!
    I have been thinking about it and here's my uneducated guess.
    The marinade probably pulls some moisture out of the fruit flesh due to the salt in the soy, and as it does so, it'll probably leave some space in there for the oil to pull in to the melon. The cooking also probably weakens the melon structure, so that might help too.
    It seems pretty interesting! I'm not vegan but this is something I'd be willing to try once watermelons are in store again in the summer.

      You're partly right. Watermelons are crispy because they are loaded with air. Cooking pushes the air out of the watermelon, and the air pockets are filled with marinade or compressed together. A lot of the original melon juice is pushed out too like you said, more from the cooking rather than salt content though. There is a machine that can actually compress watermelon (as well as other fruits/veggies) and supposedly the result is exactly like tuna. Compression is the closest you'll get to a real tuna, but apparently simply baking the watermelon works well enough.

    Smoking Watermelon is also really good. :)
    I used to vacuum Watermeloncircles with a "Syrup" out of Watermelon juice (Just the trimming of the Watermelons), Sugar, Lemongras, Lime Leafs, Chilli, Koriander Seeds,Ginger, Juice and Zest from Lime and Fresh Koriander. I didnt try it without the Sugar, maybe worth to give it a Try to make is Savory.
