I find it interesting that, even though we have selkie folktales here, we don't have an actual word that I could translate "selkie" into. The reason for this is simply because we just cal them selir, i.e. seals. There is no real distinction between selkies and seals, no special type of seal or seal like creature that can turn into a human while normal seals cannot. As far as our stories are concerned all seals are selkies, all can take off their sealform and be human, so we don't have a real word for "selkie". Kinda fun fact to realise.

With how they kept talking about THE selkie and everything I kinda think that in this story there's only allowed to be one in the human world at a time, so when her child was born a selkie she had to leave or send a newborn away. Also if you go for significant naming: her name means sorrow, so that might have a big clue to her that she wouldn't be the one, while her daughter's name means freedom, and she does go on to free them.

The movie stays pretty consistent with selkie lore so I’m guessing she just couldn’t transform into a human until enough time had passed.

So while I can't give an actual answer as to why the mom leaves (I can't figure it out) but I think it might have to do with the fact that her hair started turning white, and in another scene when the father runs after her, she says "I have to do this to save our baby", so I think she wasn't wearing her coat for a while and she started to whither. Just a guess though, not sure.

As it's established throughout the film, Selkie's are weaker in their human form and if separated from their coats after wearing them, grow ill. Because Bronagh was going into labor she was growing even weaker from the process and that could've likely posed a threat to Saoirse's survival. She had to return to the sea to regain her strength so that she could give birth and ensure Saoirse was born healthy. That would be my best guess.
