- Brownie recipes are a dime a dozen, and this one may just be adding to the plethora of recipes already available online. However, I like this recipe and want to share it with you.

Ingredients list:
Makes 1 - 9x13" brownie slab
* 220g eggs, room temp or slightly warm (approx 4 large eggs)
* 4.5g fine sea salt (2/3 tsp)
* 160g white sugar
* 125g light brown sugar
* 65g dark brown sugar (you can replace with light brown sugar)
* 15g glucose syrup, optional
* 0.3g espresso powder, optional (the instant/freeze dried kind, its approximately a pinch)
* 310g unsalted butter (final weight after browning 302g)
* 24g peanut oil (or any neutral flavoured oil)
* 10g vanilla extract (2tsp)
* 250g 70% dark couverture chocolate
* 30g cocoa powder
* 2.4g baking powder (2/3 tsp)
* 90g all purpose flour
* 10g tapioca starch (substitute with 14g AP flour instead if you wish)

I'll never get that crust as I use total 240g sugar for the same pan.... 😢 (this sweetness is accepted by all my loved ones & anything more, I consider it unhealthy)

I tried this yesterday but I used compound chocolate since couverture is quite expensive from where I'm from. The brownies turned out flaky, chewy, and delicious but it is a bit too oily, I will try again but without the added oil next time.

thanks for the recipe more recipe to come GOD blessed.. one more thing you mean 90g flour i take the 14g apf and put 10g tapioca starch thats what you mean if i dont i like tapioca will add more 10 afp total of 100apf if not 76grm afp+10g tapioca hope you answer my question thanks

I followed the recipe exactly. And beat the eggs till thick like in the video. But I still got a brownie with a dull rough top. Not sure what I’m doing wrong :(

Testing recipes take time though. And then there’s the filming and editing. I wouldn’t mind waiting cos I know her recipes are good.
