    Using fresh melon into the bread dough makes this recipe really hard to succeed. Bread dough would be sticky after first fermentation.
    if you try to make melon pan for the first time, I recommend you to try melon pan recipe without fresh melon, or reduce the amount of fresh melon.

    How to make vegan melon pan

    Ingredients:
    For the bread dough:
    250g bread flour
    150g melon
    25g vegetable oil
    25g cane sugar
    2g salt
    5g dried yeast
    80g chocolate chips
    For the cookie dough
    140g pastry flour (All purpose flour could be substitution)
    40g soy milk (or your choice of milk)
    30g coconut oil (you could use any kind of oil instead)
    50g cane sugar
    1 tsp vanilla extract
    Instructions:
    1. Mix all the ingredients of cookie dough, and put it in a fridge for 30 minutes.
    2. Cut melon and make it into puree with blender. add dried yeast.
    3. Mix all the ingredients of bread dough and knead well. leave it at room temperature until it doubles in size.
    4.Divide the both dough into 8 equal pieces. Add chocolate chips into bread dough.
    5. Roll out the cookie dough to 2mm thick. Roll out the cookie dough until a size larger than the bread dough.
    6. Cover the bread dough with the cookie dough. make patterns on surface.
    7. Wait until it doubles in size.
    8. Bake at 320F/160C for 20 minutes.

    パン生地
    強力粉 250g
    メロン 150g
    オイル 25g
    きび砂糖 25g
    塩 2g
    ドライイースト 5g
    チョコレートチップ 80g
    クッキー生地
    薄力粉 140g
    豆乳 40g
    ココナッツオイル 30g
    きび砂糖 50g
    バニラエクストラクト 小さじ1
    「作り方」
    1、クッキー生地の全ての材料を混ぜ合わせ、冷蔵庫に入れておきます。
    2、メロンをブレンダーでピューレ状にし、ドライイーストを加えます。
    3、パン生地の全ての材料を混ぜ合わせ、捏ねます。常温で二倍になるまで一次発酵させます。
    4、パン生地を8等分し、チョコレートチップを加えます。
    5、クッキー生地を8等分し、2mm厚くらいの円形に伸ばします。
    6、パン生地をクッキー生地で包み、ラティッシュカッターでメロンパンの形を作ります。
    7、二倍に膨らむまで二次発酵させます。
    8、160℃のオーブンで20分ほど焼きます。

      Melon refers to the shape, not the flavour. Only relatively recently did they start adding melon to melonpan.

      I think maybe a year ago I was in a tokyo hotel to visit my family, and in fact they were selling melon pan with actual melon at the hotel. i was like "wtheck xD"

      +Gaia Guanziroli This type of bread is usually crunchy on the outer layer and soft inside. But I don't know about this one because usually the chocolate chips are added to the outer layer...

      I think the buns are a bit dense inside judging from the 2nd kneading to add the chocolate chips. If he didn't over kneed the bread after the proof, the buns will be fluffy and springy since some of the air pockets structure are still intact inside. Been there, made a lot of mistakes making bread that were fluffy but dense inside until I notice the mistake.

      Jes You can add it earlier to the dough before the first rise, but the chips will not distribute evenly, so you can do the same thing as he did but work the dough gently by folding in and if you have the time, proof the dough a bit longer for the second rise so it develops some of the lost air pockets in the bun. Also, I would probably wrap the cookie dough after the second rise so the buns rise properly, the weight and cold cookie dough might affect the second rise.

      Mackenzie Chothia oh, sorry sorry. you can learn to eye ingredients without scale if you do a dessert a few times before or know general measurements well enough. most baked foods are not so technical that you need to follow strict recipes to every g/cc or it will fail. sorry for the mistake.

      Mewa C if you follow other people's recipes you're not a 'pastry chef', flat-out. I've baked things for the first time without strict recipes and had them come out better than most high-end stores. stop trying to deter people from being creative.

    I made this last weekend and they turned out amazing. There is definitely room for improvement in the presentations, since I think some of the cookie doughs were too rolled so they broke in the oven. But I followed this recipe all the way and everybody loved it!

      i watched music video first and than i saw there is also 'no music' version and i'm like what?!?! the music kind is so peaceful and enjoyable, why would you put no music version. then i decided to watch one because every video has no music version so it tells me that apparently there is a good reason why. i didn't regret it.

    I don't know if you realize it yet but your melon pan video is the only one on UA-cam that uses a REAL melon in the melon pan recipe :D I'm used to wondering how they use melons to make melon pans. Thank you for satisfying my long-term query.
