Why not redirect scientists efforts to make healthy canned food? Why not use internet and social media to advertise the deliciousness of canned food? Take food that is still safe to eat but skin looks not so good, to remove the skin, canned the food and sell or donate to the poor people?
Generally most people add a bit of salt to their cooking. This insight is not 100% for everything, but instead of the salt added at the restaurant or food court level where the salt properties of preserving food are not fully utilised. Why not at the farm level, add salt to dehydrated onions, garlic or ginger to preserve the must have items and lengthen their packaging shelf life? Offer unsalted and salted versions. Pre add salt to sliced onions saves time, effort and hassle for the consumers. This will reduce food waste and a win-win for most stakeholders.
this is a bad idea. Food processing plant or farm will need to provide more cost for place to salt them not to mention provide different storage for the salted one. Moreover salted will be more expensive and I reckon customer will not buy them and choose unsalted. There will be more food waste

It’s not really a total loss. Just take the bad stuff and compost it. Then the nutrients go back into the soil to make more good produce
