This yummy and versatile condiment also makes a great gift for the holidays. Use to glaze meat, add to egg dishes and sandwiches, or as a base for salad dressing.
    2 lbs. sweet onions, diced
    1/2 c. balsamic vinegar
    1/2 c. pure maple syrup
    1 1/2 t. salt
2 t. black or white pepper (black pepper will yield a spicier flavor)
    1 bay leaf
2-3 T. good quality bourbon (OPTIONAL)
    2 c. apple juice
3 T. low or no sugar pectin
1/2 c. sugar (I used brown sugar, packed)
Ladle hot jam into hot half pint jelly jars leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 15 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.
This tutorial is for informational purposes only. It is your responsibility to follow all instructions for your canner and water bath/steam canning. Always adhere to safe canning guidelines.

Oh this looks so yummy! Ill be making this during onion season 2023. Your little baby girl is adorable. I found a little long haired 10 week old stray kitten. He has more energy than I can keep up with but he has become such a special part of my life. So good to see you!!!! 🥳

I've seen other people can with bacon, or can bacon in strips or pieces, by itself. They pressure can it. I especially like Carter, on her UA-cam channel, grow and preserve. She does a great job of canning meats.

I recently discovered your channel and I'm so glad I did. I made this onion jam Wednesday. I had a little left over so tonight I spread it over a pork tenderloin that I baked. Delicious! What I appreciate about your channel, besides your thorough explanations, is that you can stuff that is useful and that I would actually eat so thank you for all of the hard work you put in to making these videos.

This sounds tasty! I prefer the savory jams. My experience has been that white pepper has more heat than black. When I use white, I always have to scale back. I made a savory fig jam for the first time this past summer from my mother's overabundant fig harvest. We have a soft spot for rescue kitties. 🥰

I can hardly wait to someday make one of these wonderful onion jam / fig jam creations. I wonder, would red pepper flakes work in this kind of jam? I don’t believe I’ve ever used red pepper flakes in any of my canning but I do love it so much. If you or any others have any ideas feel free to let me know. Thank you very much for this tasty looking recipe! ~Sharon from Florida

Just made this today and the white pepper gave this a little kick. Very yummy with the added whiskey but will be sure to reduce the pepper to 1 tsp next time.

A very interesting flavor HOWEVER Ball made a big mistake with the pepper. I love pepper but it ruins this dish. I would absolutely leave out the pepper entirely.
Other than that...not bad at all, very interesting as I said.
I've also made your Black Forest Jam (OMG) and your Orange Date Cardamom (Delish) and - today - your Caramel Apple Coffee (also hoo-whee). Thanks.

This is my first year for canning and I'm learning so much, I have started out with water bath till I feel comfortable for Pressure canning. My question is can I put some diced up Jalapeno instead of black pepper for some kick? I just finished my first batch but have another 2 lbs. of onions diced up and ready to do something with.

Hi Carol....It is always such a pleasure to watch your videos and I learn so much. My husband and I rescued a cat in July. He is such a blessing.
So I have everything ready to go for this recipe but I have a question. The balsamic vinegar I bought says 6% acidity. Is that going to be ok for this recipe? Have you come across any information on the shelf life? I plan on making several batches.
Thank you so much for all of your hard work. Blessings

Hi! Just had a question, in the book I think it calls for Agave in addition to maple syrup (I believe it’s this recipe if not it’s another onion recipe) 😂 could I sub more maple syrup and leave out agave?

Have you personally made this recipe before? I know taste is subjective, but I had heard other youtubers say that would not can that recipe again. I am looking forward to more of your Christmas gifting ideas! I'm always trying to come up with nice/chic ideas that will be appreciated.
