Balsamic Onion Jam ~ Low Sugar Canning Recipe ~ Holiday Gifting

This yummy and versatile condiment also makes a great gift for the holidays. Use to glaze meat, add to egg dishes and sandwiches, or as a base for salad dressing.
2 lbs. sweet onions, diced
1/2 c. balsamic vinegar
1/2 c. pure maple syrup
1 1/2 t. salt
2 t. black or white pepper (black pepper will yield a spicier flavor)
1 bay leaf
2-3 T. good quality bourbon (OPTIONAL)
2 c. apple juice
3 T. low or no sugar pectin
1/2 c. sugar (I used brown sugar, packed)
Ladle hot jam into hot half pint jelly jars leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 15 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

I've seen other people can with bacon, or can bacon in strips or pieces, by itself. They pressure can it. I especially like Carter, on her UA-cam channel, grow and preserve. She does a great job of canning meats.

This sounds tasty! I prefer the savory jams. My experience has been that white pepper has more heat than black. When I use white, I always have to scale back. I made a savory fig jam for the first time this past summer from my mother's overabundant fig harvest. We have a soft spot for rescue kitties. 🥰

You can use any dried spice you wish
Just made this today and the white pepper gave this a little kick. Very yummy with the added whiskey but will be sure to reduce the pepper to 1 tsp next time.
Wow..sounds delicious. I'm thinking of cutting out some of the apple juice and replace with half a cup of bourbon.

A very interesting flavor HOWEVER Ball made a big mistake with the pepper. I love pepper but it ruins this dish. I would absolutely leave out the pepper entirely.
Other than that...not bad at all, very interesting as I said.

Is it safe to caramelize the onions before continuing with the recipe?
This is my first year for canning and I'm learning so much, I have started out with water bath till I feel comfortable for Pressure canning. My question is can I put some diced up Jalapeno instead of black pepper for some kick? I just finished my first batch but have another 2 lbs. of onions diced up and ready to do something with.
I’m sorry but no you can’t. You can never add more low acid ingredients in water bath canning

So I have everything ready to go for this recipe but I have a question. The balsamic vinegar I bought says 6% acidity. Is that going to be ok for this recipe? Have you come across any information on the shelf life? I plan on making several batches.

Yes that balsamic is fine. I’ve made it before. It should be fine up to 2 years.
Hi! Just had a question, in the book I think it calls for Agave in addition to maple syrup (I believe it’s this recipe if not it’s another onion recipe) 😂 could I sub more maple syrup and leave out agave?

I made my jam and used 3 tablespoons of low sugar pectin it is still hot is it supposed to be thick or will it thicken when it cools ? Thanks
