We pan fry our rellenos after we bread them with pancake batter or crushed saltine crackers. Try coating those chili’s in pancake batter, cook them in a skillet then layer in the casserole. That should soak up a lot of the juices after baking and help bind everything together.

Chile Relleño’s are usually made with chicken but I guess whatever your preference. When toasting the chili’s any type of iron grill pan or bb&q will go the job as long as you toast for a period of time where the piping sizzling noise stops and you here more if a hiss then you have reach maximum Hispanic authenticity flavor in the chili Pasilla chilie but in your case it’s a poblano chili or it looks like it but I have heard of people using them as well but it’s really your preference as well. You guys are so amazing in trying all new goods in different cultures which is great 👍 so hats 🎩 off to Bunky. 😊🧑🍳💯

Just an idea for Mr. B for his sauce/salsa he made for his Chili Rellano Casserole. Consider roasting your veggies (tomatoes, onions & garlic in the oven before making your salsa. Even a little (a little not a lot) of char on them really adds to the flavor. The inclusion of the ground beef is new to me, but I like the idea. My casserole uses both Monterey Jack and cheddar. Sometimes I add some roasted veggies in the center. Once everything is in there pan I pour a sauce made from condensed milk, eggs and seasonings over everything using a knife to make a few holes for the liquid to deep into everything. Then bake. It is so creamy and cheesy. I top mine casserole with the same sauce I use when I make from scratch my chili rellanos. These are the ones where the chilis are stuffed with Jack cheese then dredged - but it's a little different from a normal dredge. First the stuffed chilis are rolled in flour then dipped in the fluffy egg mixture. (The whites of the eggs are beaten until stiff. Then the whisked yolks are folded in with 3 TBSP of flour (for 7 eggs). The floured chilis are rolled gently in this egg mixture (which mounds onto the chilis and covers them completely. Then into a skillet with oil to cook until medium brown. I put them on several layers of paper towels to drain. Once I have a baking sheet full I remove the paper towels and bake in a 350° oven for about 20 minutes. Once plated they are sprinkled with cheddar cheese then my hot Rellano sauce is ladled over the cheese. Oh, these are soooo good. I use the same sauce for my Mexican omelets too. For the sauce, in a large pan, put 1 or 2 large cans of fire roasted whole tomatoes, 1/2 to a whole can of tomato sauce (whole can if using 2 cans of tomatoes) and 2-3 large yellow onions sliced into curved pieces, 2-3 green peppers, cleaned, deseeded and cut into strips. Crush the tomatoes with your hand. ( You could use diced tomatoes but this is supposed to be about the onions and peppers. In whole tomatoes you get more juice and not as much solid tomatoes.) Sometimes I need to add one or 2 of those 6 oz cans of tomato juice depending on how long I simmer it.. (The onions and peppers will create more liquid as they cook). Add salt and pepper to taste. I always add 1½ - 3 tsp of Louisiana hot sauce and a few sprinkles of cayenne. Bring mixture to a boil then let simmer for at least an hour. The vegetables will soften. And impart their flavor into the sauce. Notes: 1) I often make more sauce than needed. It keeps about 1½ weeks in the fridge. I top scrambled eggs with it. I've been known to well drain some of the pepper and onions and add them inside an "adult" grilled cheese sandwich. (That's one with good interesting bread and a few different cheeses.). 2) The real rellanos with the browned egg batter freeze very well. (With the browned egg batter they resemble small cooked fish. LOL) FREEZE FLAT. Then you can stack them in freezer bags. 3) For a Mexican feast with friends make rellanos and freeze. Make enchiladas and freeze. On day of fiesta remove food from freezer at least 4 hours before. To serve reheat in oven. Make fresh Rellano sauce. Too with grated cheddar cheese. And serve with the sauce on top. It will be juicy. Fix refried beans and Mexican rice as side dishes. Since this is a bit of a heavy meal serve orange or rainbow sherbet and a sugar cookie for dessert. I started doing dinners for 75 people at my father's lodge using this method. Year after year the numbers increased once word got around. The last one I did had 114 people. Everyone gave rave reviews. Yes, this requires a lot of pre cooking. I prepared rellanos one day and enchiladas the next. My freezer, and my neighbor's freezer, were full. But on dinner day preparation was so easy. Being frozen transporting them to the hall was much easier than if they had been freshly cooked. These reheated in oven perfectly. Fix the sides and serve. Hope you try these.
Watching some of these older videos and y'all are 😂 ! Just a tip. In this video. I noticed your white baking dish. Have one just like it and it had those same stains around the top from cooking spray. Try a magic eraser to take them off. Works wonders!

One good fact I learned about smoking by my father in law. Is to get the chunks of wood not the chips because it will last longer and don't have to replace it so many times. By the way new subscriber!!!
When you make chicken parmesan try adding some parmesan cheese to your panko bread crumb portion of your breading. It give the crust a cheesier flavor. Then finish it with your sauce and mozzarella and parmesan on top. That's how restaurant chicken parmesan is made. CROCKPOT BUFFALO CHICKEN. To easily make buffalo chicken place 3 boneless chicken breasts, a ranch seasoning packet and 1 cup of buffalo wing sauce. Cook on low 4 hours and shred. I like to serve it as sandwiches on pretzel buns with extra ranch or blue cheese and carrot and celery sticks. Its also delicious on top of a big salad or the next day in a wrap for lunch. I love making this on game day.

Bunkey was right, salt conducts heat so it does help the water boil faster, BUT you shouldn't do it because the salt actually eats away at the bottom of the pan if you put it in first (this one I don't have as much of a scientific explanation, I just know it erodes the pan).
