This cake was A-MAAAAAY-Zing. A big hit at church potluck. Light and Cooley delicious for our hot Texas summer. The chantilly cream will be a keeper finish for me from now on. I tried a stabilized whipped cream recipe you posted at some time in the past and was pleased with the way it held up, but this one trumped the old recipe with flavor and stability. Then the jam….OH! Hi there! :) I don't pipe flowers too much but I usually use a 1M tip for simple roses and a 125 metal tip for more complicated roses and petals too :)

Heya :D You're so welcome! Cornstarch is important to achieve a softer texture, though you could substitute both the flour and cornstarch in the cake recipe with cake flour :)

I'm anxious to try this. Though Im curious- I've used baking soda for leavening, but I've never used teh combo of cornstarch and baking powder too in a cake. What does that do to the cake?
Hi there! :) The cornstarch is used to replace some of the all purpose flour for a soft texture (cornstarch has no gluten = softer cake) and baking powder is for extra leavening - helps to get a nice fluffy crumb :D
Made this , delicious but a small tip , if using home made buttermilk I found that a little less than 1 cup would work better. I used one cup and it was a little too soft as home made is really runny...

Thought cake flour or self raising flour already has the raising agent but the note said if using SR, replace the cornflour not the raising agent so I’m confused. Can you advise please.
Hi there! :) Cake flour is different from self-raising flour in that it doesn't have any raising agents in it, hence why the raising agents are still left in the cake batter :)
Hi...thank you for the recipe. If we refrigerate, will the cake harden due to the butter? I'm in Canada and worried about this, even if I leave it at room temperature for 2 hours before serving.
You're welcome :D and yes if you refrigerate the cake it will become firm, but if left out at room temp for a while it will become soft again :) just be sure to store the cake in an airtight container when placing in the fridge to stop it from drying out :)
Help you've confused me! I was going to make your sponge recipe with similar icing and topping, in that recipe you are supposed to brush the cake with simple syrup, now this one seems more like a pound cake with butter etc....also looks super soft .... Similar filling! Which one do I make! Both Have strawberries and cream, obviously this one has butter and no simple syrup ... Heeelp❤ oh also I can't really buy butter cream where I live, can I just sour the milk with vinegar, if so do I leave out the additional vinegar called for in the recipe? I do hope you answer this😂 I m hoping to make it for my husbands bday next week
