Especially with the cutoff cold calling the sb should be squeezing with his big pocket pairs, AK etc. On the flop, with his check shove he is repping a set of 6, TT, 99 or some flopped flushes. It is a tough spot. You are drawing dead against made flushes as all the lower flushes are blocked by the board. Mayb against this player it is a fold.

whats everyones opinion on opponents cards when you have the winner? I always flip it over quickly if im sure i have the winner and never have my opponents show. I'm wondering what the actual etiquette is. Do the stakes matter? I feel like I wish I would have my opponents show more but am i really losing out on valuable info?
It depends on who the opponent is when I am playing. If I am playing against someone new and he/she seems pretty good, I want to know what cards they are going to the river on me. I will call and wait for them to turnover their cards. Based on their cards and going back to review pre-flop, flop, turn and river bets, you can get a lot of information on how they are playing the card in their hands.
