I can't for the life of me figure out how to control 3rd party VST synths with it. Should I be switching to user mode on the keyboard and mapping that way? Also, would those settings apply to a new project when that same synth is loaded, kind of like the "analog lab" sections experience where it simply recognizes what I've selected and applies?

If I remember correctly there are banks of memory that you can save your settings and recall depending on the plug-in you are using. I will check on this later and get back to you.

I would load the plug-in go to user mode on the Arturia and map the settings I want. Once that is done I would save it on an internal memory of the key aboard however also save that project as a template so that it loads with all the commands mapped in place. For that matter load what you use the most with all the mappings and routings of choice and save that as a Logic template. That way every time you use a new project load the template.

I tried User1 and cannot seem to learn the omnisphere 2 controls. The Analog Lab and DAW (Studio One) works for me. Is there anything you can reset The Keylabs to factory settings?

If you are using Logic X. Load Omnisphere multitimbral, set the knobs as you like them and make a LogicX template. The settings will be saved. I hope this helps.
