    Hi Helen! Oh my goodness, it’s 6:30am and now all I want to do is go to the grocery store to buy Napa cabbage. It’s a long drive to the Korean grocers, so I may have to improvise with the batter. Napa Cabbage is always preferable BUT try regular cabbage leaves, if Napa Cabbage access is too far.     I'm making a small batch of kimchi today (following your recipe, which I made once before with great success) and I made this just now with the couple of cabbage leaves I removed from the exterior.     I've tried this simple receipt from other resources - all make it equally. but the sauce combination of Yours make a difference - you offer more balanced proportions, milder vinegar and really - pinch of kochugaru adds a flavor to this simple morning dish. thanks

    I have a big head of red napa that I grew from seed. I was the only one that survived the six. I wanted to do something to feature it. I did not want to kimchi it. So it is a hot one today but I am going to try this recipe.

    Can "Krusteaz Tempura Batter " ok to use for this please ??

      👋sherry a I would not use tempura batter mix. It usually contains baking powder and other ingredients. Use white flour or sweet white rice flour.

    Great 👌😊 delicious! In Asian Countries People get Bigger foods than in the USA, where we get Half of the Napa Cabbage, little Avocados, Little Watermelons, Little Bok Choys, Little Cucumbers, little Everything, unless you're Rich, in Walmart. Some stores sell the Bigger ones, but it's $6- $20 ,or more...God bless!!!

    I tried to make this, since I had to make my own batter, (according to the recipe) the result was not as crispy as expected 🙁

      Hi👋@Francisca Budi. Oh, no! Sorry to hear that it was a crispy as you wanted. If I may ask a few questions, did you preheat your non-stick frying pan? And also adjust the heat to medium-high during the frying process? Often times, not preheating the frying pan can make a difference as well as the heat it is cooking on. (The stove-heat can be tricky because everyone's stove heat has different fire-power.) Also, the pancake powder mixture doesn't really make a difference in making the pancake crispy or not. Usually it is the temperature of the pan, level of heat it is cooking on, and amount of oil.
      If you would give it another try and try the TIPS I provide in the Kimchi video, and also the written cooking TIPS on the Napa Cabbage Pancake blog (i.e. pat down with a paper towel to dry the leaves, and shake off the excess batter so the leaves are just lightly coated).
