It depends on whether they have a formation or not. If they do they should just stand still and use it. If not the spears will deal the most damage by charging (Although spears without formation prefer fighting cavalry over swords)
A wing is a term I typically use for units who have a supporting role for the center and is placed right next to it. A flank is basically just the edge or a way to recognize a certain direction. That is the best I can do with my limited english :D

"defense in depth" is a military term. i do not think he is claiming the guide itself is in depth.
