- Haitian Spaghetti with Ground Turkey and Smoked Turkey Sausage
Ingredients
1 lb Spaghetti
1 pk Smoked Turkey Sausage (sliced into pieces)
1 1lb Ground Turkey
3 tbsp Olive oil
3 tbsp Tomato Paste
3 large Tomatoes (chopped)
2 tbsp Epis (recipe in a separate document)
1 tsp All-Purpose Seasoning
1 tbsp Cloves
1 cup Onions
1 tsp Thyme fresh twigs
2 Chicken bouillon cubes
1 cup Water
1 tsp Salt
1 tsp Pepper
½ tsp Red Pepper Flakes
Directions
In a medium bowl, mix ground turkey and 1 tbsp epis. Add to the heated skillet, brown, and set aside. Boil pasta according to directions on the box. In a heavy large saucepan, heat oil, 2 tbsp of epis, cook until golden brown. Stir in tomato paste, cook the tomato paste for 3 - 4 minutes while stirring occasionally. Add peppers, onion, thyme, tomatoes, sausage, and cook for 5 minutes while stirring to blend. Add brown ground turkey, chicken bouillon, salt, pepper, red pepper flakes, 1/2 cup water, stir and simmer for 10 minutes. Add pasta, stir to blend, lower heat and cover and simmer for another 5 minutes. If needed, season with additional salt to taste. Serve hot. *Note: This recipe can be made with ground beef and any kind of sausage. It can also be made without any meat.
