I’m watching a bunch of filipino recipes for rellenong manok and I notice two styles of deboning chicken. One style is this one, to debone and also to slice the back in half so it can lie flat. The other method of deboning that I saw is making no incisions to the back to split it it into, and removing all the bones with the whole chicken intact. I like the first method, as it allows you to roll the chicken into a ballotine, as a cylinder shape. I am curious though about the second method, why people bother with that technique, because it seems harder and more time consuming whilst the first method looks more cylindrical and aesthetic.
I will choose the first method for sure and do a ballotine style rellenong manok. I think it looks more elegant rolled up like that.
