I suggest you start with simple exercises to learn how to handle the tools and feel the stone. Don't immediately embark in too ambitious projects. Hands are very hard. In my opinion, letter carving is the best way to start.

Honestly, I'd start carving by hand. One must understand the stone and how it feels with hand tools first.
@@AtharJaber I actually prefer hand carving. I have two neuromuscular diseases. Heavy use of my muscles triggers attacks. When carving wood, I usually use power tools when possible to remove bulk material at the start of the piece. Then, I do all the rest by hand. What is your best method for removing bulk? What would you suggest in my case?

No that’s just to provide some counterweight while carving. I’ve already removed it.
Why do you have so many plaster casts on the wall?
We must not forget the achievements of earlier masters and their example is always a valuable lesson.
