Oh no!! The ricotta must've been good but it sounds like it needed to be drained. Most ricotta is like that and should be set in a strainer over a bowl to drain overnight in the refrigerator. So sorry this happened but you can fix it by adding more cream cheese :) Hope that helps!!
It should be full-fat and usually popular brands like Poly-o and Sorento make good ricotta. They also make low-fat and that is not good. When you open the package it should be thick and creamy, not grainy. If it has a lot of liquid on top or if it is grainy then, set it into a strainer and over a bowl and let it drain overnight in the fridge. You will be surprised by how much liquid will be released. Hope that helps!!
