It’s nice to watch your mom cooking outside your house.The smells of food is not inside the house. Also it’s good smell of the food travels from far away and some passers by to notice it. My mom is very good cook for our family when we were young.She make sure everyone of us eat 3 times a day.And also afternoon snacks. Your mom is very good mother to both of you and your sister.Also you are very lucky that your sister is very close to your mother and your brother in law is very welcoming to your family and to the relatives.Happy birthday to Arlene. ⭐️ I love that you cook with open wood fire. Some Filipinos no longer understand the importance of the flavors added by it. We have a Visayan dish called Balbacua (which in Latin means to cook in earth oven with wood fire) made from beef, collagen-rich beef parts (oxtail, skin, and joints), and various spices cooked for several hours (more than 5hrs) until very tender. The wood fire makes it taste so much better.

Fry the chicken first then take it out then saute garlic first(half way) then onion and the rest of the ingridients all of the seasonings when everything is done. Take it all off leaving the sauce or liquids in the fan then put the noodles till its done. Then put all the ingridients back to the fan mix well. Its done ready to serve

I use stainless stell pans. I prevent onions from burning by lowering the heat when the pan and oil are warm enough and then I cook the onions on low fire. Then when I cook the chicken, I put the fire higher again.
Since you are cooking outside, it's not easy to control the intensity of the heat. Maybe you can try putting some bricks on the ground. When the cooking oil is warm, you can remove the pan from the fire and put in on the bricks then cook your onions. When the onions are cooked, put the pan back on the fire and place the chicken immediately, so the onions don't cook further. Good luck! Happy 1st birthday Arseny!
Edit: Yes, we have quail eggs in the Philippines, we call the quails, "pugo." It's a popular addition to chopsuey.
