Didn't she already get some Witcher potions to drink when she was a girl in kaer morhen? And maybe the whole girls can't become witchers has more to do with the fact that women are physically weaker than men. Also many boys were sold to Witcher schools from poor families who couldn't feed them, girls in that situation could probably fetch more coin (and have an easier life) when sold to a brothel. And only a fraction of the boys who went through the mutation survived it, so maybe they tried it on a handful of girls, who didn't make it, and out of that they concluded "girls can't become witchers". Or maybe Siri's old blood genes make her able to go through the mutation.

She was never fully subjected to the ritual. (mushrooms, potions) but is still human and not a mutant
