I made this twice this weekend for two potlucks. Friends raved about how good it was. I made one pan the night before to learn how to make it. Let me tell you it’s better when freshly out of the oven and still warm. If you make it the night before heat it up before you leave for your event. Warm is really better. Fits nicely in 9” pie tin. Great dish for potluck. :)

More a fritatta than a souffle but tasty for sure. Souffle rises and is fluffy and light. No four. no leavening agent.

using bacon greese would work well with this to carmelize the onions. Sam dont burn your mouth dude!
