    Oh my gosh. I grew up eating those. Every year our church would have a Ebelskiver fundraiser and all of the women would bring their homemade jams to put on them 😋

    I made these for our Sunday Brunch today, and they were awesome! I made the SWEET Æbleskivers and into each one I added 1 tsp. of St. Dalfour All Natural Fruit Spread Red Raspberry - IT HAS NO SUGAR! Just push the fruit spread a little into the dough, then add about 1/2 Tbls to cover up the jam and let it cook. Then flip them and let the other side cook. They were sooooooo good! We ate them all before I thought to take a photo! I've made traditional Æbleskiver before and they are a LOT of work. These healthy ones are SOOOO easy. Thank you Ann & Jane! We're going to have the savory Æbleskiver for dinner with the Crazy Krispy Hash Browns soon!
    FYI: Yes, I bought my Nordic Ware Æbleskiver non-stick pan from Williams-Sonoma and I found the greatest scoop/turner & spread tool there too. I don't know where Ann bought her turner, but these are great! I bought two and they worked perfectly!

    Yay! I made the savory version this weekend. I've had the pan for over a year and this is the first time I used it. They turned out great. Fun to make. It will be fun experimenting with different ingredients, especially for the sweet version. Thanks!

    Lol, pancake puffs are so much fun. They had the pans on tv one year, around Christmas, when my grandkids were little. They wanted that pan so badly grandma finally ordered it (but mom got stuck making them). That pan was really heavy!

      Those pans are traditionally made with cast iron, so they have some serious heft. I remember seeing them hanging off walls as decorations here in Denmark in the homes of the older generations :)

      did you know dr neal barnard warns about using cast iron pans?..
      says ok if only use now and then..never regularly bc iron only good if deficient in it

      @@georgannecollett8047 Hi Georganne, Yes, I'm aware of the concerns about getting extra iron. I don't make aebleskivers very often...once every 2 years! However, I do season my cast iron skillets so that they have a very hard coating impregnated into the metal. The layer is baked on 6 times. This prevents exposure to the bare metal surface. Thanks for your concern and for raising this point. I'm sure a number of people don't know how best to care for cast iron, or don't have the time, patience and knowledge to reseason pans as needed.

    aebleskiver means apple slices, its a deliscious danish pancake ball recipe with apples and jam in the middle..but your version is healthier , looks very good too!

    Æbleskiver!! In Danish it means “appel slices” because the original recipe calls for slices of apple in the batter. My grandma makes them with prune jam inside, also good.
    But savory æbleskiver?! 🤯 Interesting, have to try! Must be a bit like savory waffles.

      They reminded me of the Dutch 'poffertjes', but these are much bigger and rounder than poffertjes. Cool to see this similar but different :)

    OMG! Ebleskiever. Are a lost family tradition because of all the Unwanted ingredients. I've been distracting my mother from having them on Christmas morning because I don't want to eat all the eggs and buttermilk Etc. Now we can have them again!

    Jane or Ann I have a question. I've heard your Dad say no coconut. Is coconut amino legal or just stick with tamari or low sodium soy sauce. When I'm making curry I use your idea of coconut extract instead of coconut milk. Thank you!

    @Jane Esselstyn: Jane and Ann, what is your position on non-stick coatings on pans, or cast-iron cookware? I am looking for an aebleskiver pan but can only find non-stick or cast iron. The fumes from non-stick are reputed to be harmful at higher temperatures and Dr Neal Barnard is negative about cast iron cookware in Power Foods for the Brain due to the oxidising potential of iron in the body (including the brain). If I buy an aebleskiver pan I expect to use it a lot. Any thoughts? Thank you.

    Is flaxseed meal the same thing as ground flaxseed? I've never refrigerated our ground flaxseed and am now wondering if I should.

      Actually, it depends on who you talk to...it's not really recommended to buy pre ground flaxseed, but if you do, you certainly would want to keep it in the fridge...not the freezer because it loses nutrients there as well.
      For full nutritional benefit, you want to grind your whole flaxseed as needed and use it immediately/same day, only grinding what you need. If you should grind more than you needed, store the flaxmeal in an airtight container in the fridge asd use asap.

      Yes, flax seed meal and ground flax seed are one and the same. I buy my flax whole and grind some for my morning oatmeal. I place the ground flax in a jar in the fridge. I hope that helps.

      It is the same. Best to buy whole flax & grind just before using. I use a small coffee grinder. Fresh ground makes the best egg-replacer because you've opened it up. Pre-ground has formed a skin around edges & really needs to be soaked to get good egg replacement effect.
      Pre-ground flax is often already rancid when you buy it from the store so shop where it sells quickly and buy from a quality brand, like Bob's Red Mill and keep in freezer.
      Once it's been ground it loses its nutrients almost immediately so pre-ground is just for binding in baking. If you want nutritional benefits, you must grind & eat immediately.

      In Danish it's called Æbleskivejern litterally meaning "apple slice iron".
      I got no idea what it might be called in English since I have never needed to know the English word until now :)

    My wife has hypothyroidism. Her weight has hit a standstill or even is going back up. Any recommendations on what to eat more of or less of on a whole food plant based diet? She’d like to still lose about another 15-20 lbs. to get into the normal BMI and burn off some fat.

      Check out the Engine 2 7-day rescue diet or maybe Chef AJ, Dr. McDougall, really any of the plant-based specialists (books, UA-cam), but look for weight loss, not just health. Bottom line, eliminate all nuts, nut butters, avocados, and watch the seeds (very limited). Eat your food, don't drink it; start meals with lots of greens then move on to starchier foods. It's all about calorie density and staying on the lower end. Check out Drs. Lisle and Goldhamer and The Pleasure Trap. It's kind of a hard book to get into, but lots of good info on UA-cam. I also enjoy Dillon Holmes' channel/facebook group Well Your World.

    Starting last Sunday I start doing oatmeal Then I heard your mother day put vegetables in it I then put lil pecans Went shopping picked up more vegetables
    Here we only have three stores not big variety of veg here
    I cut up zucchini shredded carrots I started put like third cup of variety
    I use like tablespoon of honey in
    I truly love it
    My whole life I always seem could not help crave sugar sweets even if I wasn’t hungry I need sweet
    I like to thank u and your family just this one week I have not crave sweets I have not been hungry
    I want to thank you
    Planning on trying to get your book
    Now I made meats use only lil pink salt
    I plan on going to stores an hour from here to buy items I say I love to go all way plant base but as I say stores here don’t have lots variety
    I planted vegetables seed took too long went to store they had seedlin I purchased lots so they are growing
    I am senior who need to loose weight I tried working on but the craving just took me over
    I must tell u in all my life I have never not craved sweets
    Until this blessed week
    I know I going to get my sugar under control but in process writing grocery list of item u talk of that I can not get here
    Last I saw an dr he said reduce salt I working on that I now buying herbs to season with

    Ich finde ja die Ernährung richtig gesund und halte auch viel davon. Was ich mir mehr wünsche sind Rezepte von Hauptgerichten (wie Kartoffeln- oder Reisgerichten) In letzter Zeit gibt es ja nur noch Backwaren wie Pancakes und viele andere Nachtische.
