I've never eaten Walleye before. Looks tasty tho. That white meat reminds me of the halibut my wife and I caught in Alaska back in 2009 and had shipped home. Chunked up white meat deep fried..OOOO so good.
Interesting to see how other people do it. That small knife made me cringe, I much prefer a bit longer. If you save the cheeks, might as well save the throat or the "wings" also. Lots of meat there too. I usually cut the middle section out, but liked seeing your method.

the only thing you are missing out on is a nice white fillet, you could bleed the fish when you first catch them, IMO.
