You can do the same thing but without removing the lines at all. They just drain back into the reservoir, suck it back out and keep doing that till it’s dry. Then fill it in. No reason to remove hoses.
if you dont disconnect the return line, either it will suck an air or the old fluid will mix to the new one..the momment you move the steering wheel the old fluid come out from the return line before the new fluid is in..

How do you turn the steering wheel without having the engine on. Because my steering wheel gets locked if the engine is off
Turn the ignition key to ACC i.e. one stop before the IGNITION, there are 4 steps of the key i.e. Lock, Acc, Ignition and Start.
See how he lifted the car off the front wheels? There's no weight on the wheels, making it easy to turn with key ignition in ACC
