Pretty good contrast between country people and city people's idea about BBQ integrity. As it's getting harder to find a local bar I can feel comfortable in, turning our independent BBQ into Southern Chic is a bother. The best BBQ came from the converted gas stations that uses picnic tables inside and out. I do want unlimited tea, paper towels, and hot sauce. If the BBQ doesn't have chunks of fat in it don't bother me with it. Plus I want beans, greens, and banana pudding to round out my needs at a BBQ joint. Plus a waitress that says, "Honey, would you like some more?"
There's a really good place in Porter,IN that has a bar in the front and BBQ restaurant in the back, but you have to go through the bar to get to the restaurant so it's 21 and over only.
In Murvul (Maryville), TN, there is a converted gas station to BBQ. It's called "Full Service BBQ." It is just as you described. All eating is outdoors on picnic tables - all year long.
When I eat BBQ, I want to be greeted by a smiling cartoon pig, ideally with a chef's hat, absolutely a full roll of paper towel on a sturdy metal rod mounted on the table and some smiling staff keeping the oversized drinks full. And I'm a European immigrant living in the pacific northwest. 🙂

There's a chain in Oregon called pig and pancake and their mascot is a cute little cartoon pig. My wife and I were in there and someone questioned the sanity of the mascot. Before I could say anything, a twangy voice from the back bellowed out, "DANG HIPPIES, THEYS MASCOTS JUS' LIKE 'EM ALL OVER TH' SOUTH!"

I was so upset when I found out my local BBQ place went out of business. Cleve Edmunds Bar-B-Que was open for more than 70 years. Had the smiling pig mascot, paper towels, all sorts of signs and framed things on the walls, picnic table covers, and I think some of the chairs once belonged to a school.

Our favorite local bbq joint is literally sold out the back of an old gas station/bait shop. No joke. You get your order of pulled pork mounded on a paper tray wrapped in wax paper. Sides in styrofoam drinking cups. But the bbq is truly heavenly. We'd be tickled pink if they just had a few old picnic tables in the side lot and even offered paper towels and utensils. Matching chairs and a drink station is out of the question!
About two miles south of my house was a tiny shed place called "Queen Nefertari's BBQ" It had a sign (bigger than the place) with a cartoon pig dressed as a Pharaoh barbecuing a suckling pig.
One of my great memories is visiting my mom and going to a place where waitress's walked around ripping off a piece of brown hand towels and put it in front of you and piling fried okra on it while you waited for your order to arrive. Oh, and every so often someone would come out of the kitchen and holler " who wants rolls ?" Then would toss them to you from across the room. Great place.
Lambert's Cafe in Sikeston Mo has throwed rolls. My niece was on a field trip where they stopped there to eat & the kids were all amazed at the flying food.
Several years ago, my mama and I stopped at a barbecue joint in the low country of South Carolina. It didn’t have a sign out front, it just had a model of a pink pig on a post. I had some of the best Southern food of my life at that place. When we asked the waitress what the name of the place was, she said, "The Pink Pig." We said we didn't know, and she said, "Didn't you see the pink pig out front?"
The BBQ joint I raised my kids in just changed the interior to black vinyl seats in black steel frames. You could've used a pic from that place in your video. It was a sad day when I went in after the remodel. I tell myself they must've changed hands because I can't bear thinking the original owner would've done that.
@@thejohnbeck true. My guess is they either sold the company or a new generation of the family took over and implemented their idea to "update" the place to a more "classy" feel. To me they just erased my 45 years of eating there before I had kids, while raising my kids and now them taking their kids there and replaced it with place I don't recognize or have a connection with. But having said that, I went through the drive thru yesterday and got dinner lol
The best barbecue comes from a cinder block building that's barely able to pass the health department inspection,with a smoke pit presided over by an old man who's done the job since the 60's & feeding the dogs the bones while inside the lights only work half the time, the linoleum is peeling off the floor in spots & it's like stepping into the night, even at nighttime because you have to feel your way to the table.

I'm a branding specialist married to a manufacturer of custom restaurant furniture. We're both Southern. AND we agree with Jimmy (mostly). NOBODY is actually willing to pay for actual reclaimed barnwood costs, but then you don't actually expect it at an IHOP. ;) The best BBQ always comes from that one relative that has made it a life's mission and has a special rack of speciality woods just for the smoker... or the hole-in-the-wall places with oilcloth covered tables that are either sticky or really wet if someone has been by with the bleach water rag.
It is a comfort to see a smoker with a pop-up tent outside a gas station. Makes me smile every time I see it! And I wouldn't trust a BBQ joint that doesn't have a cartoon pig on it clothed in the primary colors. And a modern logo is a sign that I am going to pay too much and leave still hungry. Just sayin...

This is the perfect example why City people do not understand hole in the wall restaurants that serve barbecue. If you don't have a roll of paper towels, plastic knives, forks, and spoons along with basic hole in the tables and chairs then it is not a true southern BBQ place. I live in North Carolina and I know my BBQ
That's a really stupid stereotype. I grew up in Baltimore, but I also grew up on good barbecue (and homemade at that, not from a BBQ joint). My dad is from a little town in SC, and his dad taught him how to make the best in a barbecue shed he built in their backyard. And my dad taught me. I might be a "city person", but I bet I know more about what makes good barbecue than the majority of country folks out there who have to get theirs from someone else. Bless your heart.

When I was little my favorite BBQ restaurant had 2 pigs on the sign that looked like Porky Pig, they were holding sticks over a log fire. Like when you roast marshmallows over a campfire. They had chef's hats on too. They had inside dining, but nobody took their kids inside. You backed into the parking spot, and turned your headlights on for service. (No the waitress did not roller skate out.) A traditional meal was BBQ sauce baked pulled pork, with minced coleslaw in the bun, fries, a limeade, and chocolate cream pie for dessert. Their hot sauce came in salt shakers, it was usually just enough for a family of 3. But remember the old cars in the 60's had glove box door that was set up for eating in the car, there was a dimpled in spot for your drink cup. Dad had the tray hooked on the window, mom had the glove box door, and I had the back dash. Everyone in Richmond, Virginia that's old, remembers Bill's BBQ. And there ain't nothing like it in Central Florida. I'd pay $100 to have one of their dinners again. Especially if I could eat in the car. Anybody know their recipe, open a restaurant in Orlando, you could make a fortune off of the displaced Virginians alone. For a highschool fundraiser my comic artist step parent made us drawings of a hot dog bbqing screaming hot dogs on cooking forks and what looked to be a drug addicted cow flipping burger patties. It was a hit.

In southwest Virginia all the BBQ joints have a cartoon pig. You can also get a crockpot pulled pork sandwich in most gas stations for $3, if there’s a smoker outside it’s $6.

The BBQ joint I raised my kids in just changed the interior to black vinyl seats in black steel frames. You could've used a pic from that place in your video. It was a sad day when I went in after the remodel. I tell myself they must've changed hands because I can't bear thinking the original owner would've done that.
and on top of that, it's hard for them to switch back because of all the money they've spent on the switch.
@@thejohnbeck true. My guess is they either sold the company or a new generation of the family took over and implemented their idea to "update" the place to a more "classy" feel. To me they just erased my 45 years of eating there before I had kids, while raising my kids and now them taking their kids there and replaced it with place I don't recognize or have a connection with. But having said that, I went through the drive thru yesterday and got dinner lol

The best barbecue comes from a cinder block building that's barely able to pass the health department inspection,with a smoke pit presided over by an old man who's done the job since the 60's & feeding the dogs the bones while inside the lights only work half the time, the linoleum is peeling off the floor in spots & it's like stepping into the night, even at nighttime because you have to feel your way to the table.
And the old man must weigh 400 lbs. His perspiration is the Secret in the Sauce

NOBODY is actually willing to pay for actual reclaimed barnwood costs, but then you don't actually expect it at an IHOP. ;)
The best BBQ always comes from that one relative that has made it a life's mission and has a special rack of speciality woods just for the smoker... or the hole-in-the-wall places with oilcloth covered tables that are either sticky or really wet if someone has been by with the bleach water rag.
It is a comfort to see a smoker with a pop-up tent outside a gas station. Makes me smile every time I see it! And I wouldn't trust a BBQ joint that doesn't have a cartoon pig on it clothed in the primary colors. And a modern logo is a sign that I am going to pay too much and leave still hungry. Just sayin...

This is the perfect example why City people do not understand hole in the wall restaurants that serve barbecue. If you don't have a roll of paper towels, plastic knives, forks, and spoons along with basic hole in the tables and chairs then it is not a true southern BBQ place. I live in North Carolina and I know my BBQ
That's a really stupid stereotype. I grew up in Baltimore, but I also grew up on good barbecue (and homemade at that, not from a BBQ joint). My dad is from a little town in SC, and his dad taught him how to make the best in a barbecue shed he built in their backyard. And my dad taught me. I might be a "city person", but I bet I know more about what makes good barbecue than the majority of country folks out there who have to get theirs from someone else. Bless your heart.

When I was little my favorite BBQ restaurant had 2 pigs on the sign that looked like Porky Pig, they were holding sticks over a log fire. Like when you roast marshmallows over a campfire. They had chef's hats on too. They had inside dining, but nobody took their kids inside. You backed into the parking spot, and turned your headlights on for service. (No the waitress did not roller skate out.)
A traditional meal was BBQ sauce baked pulled pork, with minced coleslaw in the bun, fries, a limeade, and chocolate cream pie for dessert. Their hot sauce came in salt shakers, it was usually just enough for a family of 3. But remember the old cars in the 60's had glove box door that was set up for eating in the car, there was a dimpled in spot for your drink cup. Dad had the tray hooked on the window, mom had the glove box door, and I had the back dash. Everyone in Richmond, Virginia that's old, remembers Bill's BBQ. And there ain't nothing like it in Central Florida. I'd pay $100 to have one of their dinners again. Especially if I could eat in the car.
Anybody know their recipe, open a restaurant in Orlando, you could make a fortune off of the displaced Virginians alone. Once everyone else catches on the skies the limit.

In southwest Virginia all the BBQ joints have a cartoon pig. You can also get a crockpot pulled pork sandwich in most gas stations for $3, if there’s a smoker outside it’s $6.

I literally did this for a food truck project. I literally had a chicken eating pie while sitting in a pot insinuating that he was going to get eaten. My gimic was pie so I thought a literal chicken pot pie would be funny.
