Perfect Winter Stew!!! *Easy Crock Pot Recipe*

Crock pot beef stew:
Ingredients:
3-4 lb chuck, diced into cubes
1 large yellow onion, diced
4-5 garlic cloves, finely minced
1 cup red wine
4 cups beef broth (10x better with homemade broth)
2 tbsp Worcestershire Sauce
3 tbsp Tomato Paste
5 medium carrots
2 celery sticks
1 lb Yukon gold potatoes
2 bay leaves
1 sprig rosemary
1 thyme sprig
Salt & pepper
Season the chuck with salt & pepper, then sear on all sides
Reduce heat to medium, then add 1 large diced yellow onion and saute for 5 minutes, then add 4 cloves of garlic and saute for 1 minute
Add the tomato paste and cook until caramelized, about 3-4 minutes
Add the red wine and make sure to scrape any fond off the bottom of the pan
Add to crock pot with the rest of the ingredients
Cook on low for 6-8 hours or high for 3-4 hours, until the meat is tender, then season to taste
Optional: To thicken, combine ¼ cup COLD water with 3 tbsp of arrowroot starch. Slowly add it to the stew, stirring to incorporate.
