Chinese Water Chestnut Cake 馬蹄糕 🌰

  • These Chinese Water Chestnut Cakes 馬蹄糕 are so light & refreshing! They're not overly sweet and have a fun jelly-like texture with crispy bits of fresh water chestnuts 🌰. If you're looking for a treat that's lightly sweet and pure, this is the recipe for you!
    Ingredients:
    - Fresh water chestnuts - 365g (roughly 16, I would recommend buying extra in case some are too old, you'll know if the inside is yellow-ish)
    - Water chestnut starch - (200g or 1 cup + 1 tbsp) - amzn.to/3nOLhNw
    - Brown sugar slabs - 2 sticks
    - Water - 5 cups or 1200 ml
    - Rock sugar 20g or 1/4 cup of granulated white sugar
    - neutral oil to brush the steaming pan i.e. vegetable or corn oil

    That looks so good. I love it when it's stuffed with water chestnuts. The restaurants now cut down the amount they put in now. Excellent presentation and can't wait to try it. 😋

      2 slabs but you add more if you like sweeter

    Perfectly put together video. Tried but cake not firm, even after leaving it in the fridge for one night. Why?

      Thank you! The mixture might have not been thick enough before placing in the container. When you mix the chestnut flour liquid into the sugar water, make sure the heat is off. And mix it in slowly in three parts. For the first part, mix it well until it’s thick before adding the remaining mixture. Also, make mix in “one” direction only vs switching between clockwise and counter-wise. Hope this helps!
