I saw you replied to someone here about not having green eno pk then u said to use regular eno+1/2 tsp lemon juice. Ok, but if i m not having khatta dahi then anyways i am going add few drops of lemon juice to make it khatta. Yes ...If u have regular blue eno Then add 1/2 tsp lemon juice with eno And for khatta dahi U should also have to add few drops of lemon juice in curd to make it sour else u can keep it out of fridge or warm place for 2 to 3 hours to make it sour.
If u are using twice lemon juice in ur recipe then add little more sugar or u can also use 1/2 tsp honey for balancing the taste. Also it will help the flour to rising

Hi ...I tried this today ...but unfortunately I didn't get the color as u rs ...but ot was soft . Don't know the reason for not getting the color n softness as urs.
Kneading process is the key ingredients in the bread & pav.....If ur dough is perfect u will get the softness in pav n bread. And for brown colour it takes more 10 to 14 min with tight lid ..... Thank u for trying.
If u bake this in oven or otg result will best But in kadai .....The main factor is bottom of kadai ....If u are using thik bottom kadai it takes litte more time to cook but it will rise perfectly and colours too

मेरे पाव मे एसा कलर नहीं आता सफेद ही રહેતા है और ज्यादा पकने दिया तो बहुत हार्ड हो गया

Mene ye recipe follow kri but 40min phle hi wo pav niche se burn hone lg gya or upr se bilkul bhi brown nai hua ....esa kyu hua
Kadai me bake kiya ho to kadai ko preheat karna hay fir baking ke liey jab rakhe to us samay pahele 10 min fast to medium fir baki ka time slow to medium bake kare
Lid ko tight close kare to garmi bahar nahi niklati to wo uper se brown hota hay + milk me honey ya sugar mix karke milkwash kare to uper ka pav jaldi brown hota hay.
Kadai ka tala kitna mota ya patla ho uspe bi baking time depend karta hay
Agar mota tale ka bartan ho to samay jyada leta hay par kadai ka tala patla ho to jaldi garam hota hay to samay cum leta hay

20mins se jyada maat rakhna, mere jal gaye pure.
Ye kadai ke uper depend karta hay.... Agar kadai moti tale ki ho to time lagta hay par agar patli hogi to baboy jaldi ban jate hay.

Or first rest me aata acche se rise ho uske baad hi aage ka process karna hay
Agar 2 hours me aata rise nahi ho to 1 hour or rakhna rehta hay fir aap use kneed karke second rest de sakte hay
