  • These cannoli are vegan, gluten-free, and sugar-free for a healthier twist on the classic Italian treat. We'll make oven-baked, crunchy cannoli shells from scratch, and then fill them with a delicious pistachio cream!

    ✅ Ingredients (you can switch between Imperial and Metric System, and adjust servings, on our site)
    ◽ Pistachios - 100 g
    ◽ Chia Seeds - 0.5 tbsp
    ◽ Water - 1.5 tbsp
    ◽ Gluten-Free Flour - 100 g
    ◽ Xanthan Gum - 0.5 tsp
    ◽ Erythritol - 200 g
    ◽ Cocoa - 1 tsp
    ◽ Nut Butter (Almond, Cashew, or Peanut) - 30 g
    ◽ Almond Milk - 35 mL
    ◽ Firm Tofu (it must be firm tofu, not silken tofu) - 400 g

    ✅ Substitutions:
    ◽ You can use any type of plant-based milk you like. We used almond milk because it has a subtle flavour.
    ◽ You can swap 200g of erythritol with 130g of white sugar, and use 30g for the shells, and 90g for the filling. Note: if you use sugar the recipe won't be sugar-free.
    ◽ If you are using white sugar instead of erythritol, use 25 mL of plant-based milk instead of 35 mL.

    What gluten-free flour do you recommend? I have buckwheat, chickpea and rice. Which one should be better? Thank you 🙏

      Go for the rice one! The other two have too strong a flavour for this recipe :)

      @@ROveganDaniela I think so! A lot of gluten-free flour mix we find at the supermarket either use xanthan or some type of starch, and I've seen some of them use tapioca starch itself! But I don't think you can replace them 1:1. Do you have plain rice flour, or do you have a GF rice flour ? The latter may already contain these extra ingredients

      @@foodaciously It’s a plain rice flour, nothing added to it. I will try with tapioca starch, I hope will workout. Thank you for all!

      @ROvegan I see! Because the cannoli shells need to get crunchy, I wouldn't really be overly obsessed about using starches. Their only purpose is to make the shell dough pliable enough to wrap around the tube without cracking. If I were to try it right now, I would use a level tablespoon of starch (around 10g) for every 100g of flour. Let me know how it goes! ♥
