FLUFFY & RICH Chocolate Cake Recipe | Chocolate Strawberry Shortcake

  • We are making a very fluffy and light yet rich chocolate cake today. Amazing chocolate cakes do not always have to be very heavy! This cake is the proof ;) I’m sharing a lot of tips and tricks of pastry making step by step, I hope you’ll enjoy and find it very useful!!
    [INGREDIENTS FOR CHOCOLATE SPONGE]
    For 2 6”(15cm) pans or 1 8”(20cm)
    • Egg: 4 large eggs (about 228g/ 8oz)
    • Granulated sugar: 140g (4.9oz)
    • Cake flour: 90g (3.2oz)
    • Cocoa powder: 20g (0.7oz)
    • Milk: 30g (1oz, about 2 Tbsp)
    • Oil: 40g (1.4oz)
    FOR CAKE SYRUP(For 2 6” or 1 8” cake):
    • Water: 45g (about 3 Tbsp, 1.6oz)
    • Granulated sugar: 30g (1oz)

    * The recipe listed in the video is a half batch of today’s amount. Today, I did double the amount. Just to let you know!
    BAKE with 355F/180C for about 23-35 mins, depending on the size of your cake.
    *Adjust the time and temperature depending on the oven and size of your cakes.
    [INGREDIENTS FOR CHOCOLATE CREAM]
    (For 2 6” or 1 8” cake)
    • Dark chocolate (Today, I used 55% couverture chocolate. A link below.): 200 (7oz)
    • Heavy cream (Very warm. I recommend 35-45%): 200g (7oz)
    • Heavy cream (Very cold. I recommend 35-45%): 550g (19.4oz)
    • Granulated sugar: 25g (0.9oz)
    [FOR TOPPINGS/FILLINGS]
    • Fresh strawberries
    • Fresh raspberries
    • Dark chocolate (Same kind as the cream)
    • Gold leaf
    • Edible gold powder
    [CHOCOLATE GANACHE]
    Dark chocolate (Same kind as the cream): 50g (1.8oz)
    Heavy cream: 50g (1.8oz)
    Oil (Olive oil this time. Any regular oil is fine.): 10g (about 2 tsp)
    * I had a lot left after I used, so you can make a half batch or freeze the rest for the next use!

    This looks SO delicious, Im definitely going to be trying out this recipe soon. For now im using your other Chocolate Cake Recipe and use this recipe's Chocolate Cream for its Decorating! I also love the way all the video links on how to make all Buttercreams are by you. Your tips and tricks are all very handy since im a beginner. Keep them up :)

    hello Aya! Great that i found your recipes. But i have some questions in mind.. will the cake stay soft when we eat right cold from the cake chiller? Since my customer always eat them cold. And complaining if its get harder😢😢

    Your explanation and clip are very clear. I can find and fix the trouble of whipping cream loosen. All photos are clear and so beauty. I like chocolate cream that contain whipping cream warm and cold. Moreover, ganache is contained oil.
    I will try to cook both and feedback the result soon.

    AMAZING! thank you very much! I have a question, what temperature the eggs on the Bain Mary needs to reach before beating them on the stand mixer?

      I warm it up until it is warm like comfortable bath water. It's about 40-45C. I usually dip my finger in and check!

    Hi Aya! Happy new year and thanks for sharing this tasty dessert 😍 Just a quick question. I want to try to make the cake using 8in x 1.5in round pan, can i still use 2eggs ? and do you think I will get two thin layers? Or do I need to bake two cakes? Thanks for any recommendations.

      Hello! With 2 eggs, it'll be too thin, so I recommend to do 4 eggs for 1 8" pan.

      I think the double batch is enough! Or three batches if you want thick layers.

    Aya I wanna make this for an event but I'm using 9 x 13, how long should I bake them at 355? Can I also make the batter before hand and put it in the fridge and bake it later or will it deflate the bubbles?

      I think she said she baked her cake 1 day, then assembled the next? If so, that, baking ahead then chilling, may be your better option. As for time, perhaps take the average time [for a 9X13] & start checking (toothpick method) from 5 mins before the goal time. 🤷‍♀Hope this helps!

      I would say... about 5-10g. You can reduce more if you like. Just know that the texture gets more rough with less sugar.

    Why did you bake two cakes if you only used 1 half and split in 3??????? You didn’t even explain that. Everything else that’s way over explained that isn’t necessary and then something like that, which is a strange thing to do, bake two cakes and only use one. You didn’t say why??

    You really don’t make it clear in any video what the crumb coat is compared to the rest of the icing. You mention one needs to be soft and makes it easier etc etc but I don’t know whether you just got your words wrong but you’ve contradicted yourself in different videos telling us which one is softer. And what another the other one? Why do you even need two? Is the other one more chilled ??
    You really over explain soo many extremely simple things that’s very obvious. Then you tend to brush over the stuff that’s important and what people want to get right. It’s very frustrating tbh.

    I love this channel so much but you really do talk way too much between steps. People don’t want to sit through long videos anymore. That’s why shorts is so popular. This video could have easily been half as long. You don’t need to over explain every single thing
