      Braden Webster charred kolrabi puree, not sure about the darker gel looking garnish. Id be curious to know also.

    I watch Sunday's episode of Anthony Bourdain Parts Unknown where chef Sean Brock praises Country Ham. I would like to know the brand and which type of hog it comes from?

      If I had to guess... I'd say Mr. Brock gets his country hams from the same genius who provides Sean his prefered bacon, a fellow named Allan Benton in Madisonville, TN, about a half hour south of Knoxville. Mr. Benton makes, hands down, the best smoky, salty (can be very salty) bacon I have ever put in my mouth!!! . And his country hams are out of this world. His aged, prosciutto style hams, are deep and rich and complex... melt in your mouth special. I buy a cooler full of his meats every time I drive back to Michigan from family visits to Georgia.       Yeah. Watching him just rub bacteria into the meat definitely will keep me away from any kitchen he's in. Utterly disgusting.

    So.....you run your hand on your neck and then touch the food you serve to your guests???? Also, WHAT A PRETENTIOUS DISH/RECIPE! WTF IS UP WITH CHARRED KHOLRABI THIS AND THAT? ALL THAT HAM NEEDS IS A BUTTERMILK BISCUIT, EGGS, AND GRITS. GET THAT OTHER CRAP OUT OF MY FACE!
