  • Even if you've never made it before, DELICIOUS Pad See Ew is a dish that's easy and tasty. Everyone will love this sweet, salty, tangy dish of comforting wide noodles, veggies, and chicken.

    INGREDIENTS:
    For the Sauce:
    3 tablespoons low sodium soy sauce
    3 tablespoons oyster sauce
    1 tablespoon rice vinegar
    2 tablespoons light brown sugar
    1 tablespoon molasses
    ½ teaspoon ground coriander
    ½ teaspoon garlic powder
    salt and fresh ground black pepper, to taste
    For the Stir-Fry:
    8 ounces wide rice noodles or pappardelle, or other wide noodles
    2 tablespoons toasted sesame seed oil
    1 tablespoon low sodium soy sauce
    8 ounces boneless skinless chicken breast, chopped into bite-sized pieces
    1 cup broccoli florets, roughly chopped
    3 cloves garlic, minced
    2 cups baby spinach
    lime wedges, for serving
    1 teaspoon chili flakes, for garnish, you can also use ½ teaspoon crushed red pepper for a spicier dish
    DIRECTIONS:
    Place all the sauce ingredients in a bowl, and whisk until combined. Set aside.
    Prepare the noodles according to the package directions.
    Meanwhile, heat a wok or a large 14-inch skillet set over medium-high heat; add the sesame oil, soy sauce, and chopped chicken, and cook for about 4 minutes.
    Stir in the chopped broccoli and minced garlic. Cook for an additional 3 minutes, stirring frequently.
    Transfer the chicken and vegetables to a separate bowl and set aside.
    Add the cooked noodles to the skillet, and saute for about 2 minutes over medium-high heat, until the noodles begin to turn toasted and dark in spots.
    Return the chicken and broccoli to the skillet; stir in the spinach and the previously prepared sauce mixture. Bring to a simmer until the sauce thickens and becomes shiny. Stir frequently.
    Remove from heat; serve warm, with lime wedges and a sprinkle of chili flakes.
