    Almond Tart Crust:
    Butter (room temp): 180g or 12.5 tablespoons
    Confection sugar: 127g or 3/4 cup
    Egg: 50g or 1 large
    Yolks: 18g or 1 large egg yolk
    Kosher salt: 2g or 1/2 teaspoon
    AP flour: 196g or 1 1/4 cup
    Almond flour: 200g or 2 cups
    Poached pears:
    2 medium pears
    Apple juice: 120g or 1/2 cup
