Vanilla bean paste: 2g or 1/2 teaspoon
Egg yolks: 58g or 3 egg yolks
Gelatin: 2g or 1 sheet
White chocolate: 75g or 1/2 cup
Almond Tart Crust:
Butter (room temp): 180g or 12.5 tablespoons
Confection sugar: 127g or 3/4 cup
Egg: 50g or 1 large
Yolks: 18g or 1 large egg yolk
Kosher salt: 2g or 1/2 teaspoon
AP flour: 196g or 1 1/4 cup
Almond flour: 200g or 2 cups
Poached pears:
2 medium pears
Apple juice: 120g or 1/2 cup
Water: 120g or 1/2 cup
Sugar: 75g or 1/3 cup
Vanilla bean: 1
Almond Cream:
Sugar: 100g or 1/2 cup
Almond flour: 100g or 1 cup
Butter: 100g or 7 tablespoons
Eggs: 100g or 2 large eggs
Almond paste: 25g or 1 tablespoon
Apricot Glaze:
Apricot jam: 1/4 cup
Water: 1 tablespoon
Vanilla bean paste: 2g or 1/2 teaspoon

How much time do you need for the cremeux to defrost?
10-15 minutes. They’re small so they defrost really quickly!
