The three things that have made my Belgian Witbier better are: Using a Belgian pale ale malt. I prefer Dingemans Using the oval coriander seeds instead of the round ones Using fresh organic oranges making sure there is no pith attached to the peel If you're interested, my Witbier recipe is: 5 lb Belgian Pale Ale malt 44.4% 5 lb Flaked wheat 44.4% 1 lb Flaked oats 9.0% 4 oz Weyermann Munich II 2.2% East kent Golding hops @ 60 minutes calculated by AA% to get about 15 IBU 30g Fresh Organic Orange peel @ 5 minutes 15g Freshly crushed oval coriander seeds @ 5 minutes (My Orange peel and Coriander seed amounts sometimes vary depending on my mood on brew day but these amounts are my base and make a nice beer) WLP400 Belgian Wit Yeast I use a 75 minute two step mash First step is 122° for 15 minutes Second step is 154° for 60 minutes Boil for 75 minutes Chill to 68° Ferment @ 68° for 2 - 3 days then allow to free rise to 72° and hold there until finished. OG 1.050 FG 1.012 ABV ~4.8 to 5% Just note that this recipe is for my system and I collect 6 gallons in the fermentor so your OG and ABV numbers may vary if you use the same amounts of grain. I've included the percentages if you use BeerSmith and want to calculate for your system. Hope this helps. Nice update Steve! You have a nice setup! It’s always hard to create a clone recipe, as just about anything (water, yeast, hops, fermentation temp) can effect the final product. I’d do a comparison of clone recipes, that are available on the internet, see where they differ and try to make an educated guess as to what you are missing in your present recipe. I like MoreBeer, but have had some issues with theIr timing on shipments of liquid yeast, so it ends up sitting in a truck or on a loading dock all weekend. Not ideal when it’s 90+F outside. They have free shipping, but keep raising the "minimum buy" limit. I see that you now have to spend $59 to qualify for free shipping. Because of that, I buy two beers kits at a time. Cheers!
