    Can you get mesquite or pecan? That is an amazing wood to smoke with. Love your channel!! Grow some turnips greens, mustard, and collards amazing.

    Try using apple pecan or hickory. you'll be glad that you did.

    Maybe try putting lamb with fat side up when first starting, then the fat will dissolve down into the meat making it more tender.

    Sorry but the Pork belly looked really bad but I don't like eating fat. OTOH the lamb looked delicious and better than you would get in a restaurant.
