To decrease the distance from the group head to the cups even more (minimizing heat loss), I have resorted to just placing my lips directly into the spout of the portafilter. Initially you'll get quite a few blisters, bit once they harden and become calloused, you'll be getting maximum flavors and heat retention from your shots.
I don’t think the temperature thing is actually the reason for the cup riser. Coffee’s essentially an emulsion of oils and solids suspended in water. Generally, it’s a pretty stable emulsion, but it can break and the oils and water will separate (like salad dressing). The harder the coffee hits the cup, the more likely it is that the emulsion breaks. You can test this for yourself by making a pot of normal drip coffee and pouring two cups: one like normal and one from several feet above the cup. The one poured from a greater height will have a noticeably different taste than the one poured normally. That said, I’m skeptical that there’s any tangible difference at espresso machine scales, but the principle is legit at least.

Both machines are beautiful and offer flow control. Do you have any advice regarding the differences between the two machines? Quality and workmanship? Would you recommend one over the other?
I like the preinfusion feature of the Bianca V3. can be programmed and repeated. The Synchronika not similar. I am debating between these two also. Which did you choose?

Hi, froth is just suspended air. When you steam milk you add water and air. In order for a sugar cube to sit on top of froth it would have to have a lower density than the frothed milk. It may be possible with granular sugar if it's spread out and added slowly. Like if you put powdered chocolate on top of a cappuccino but with a cube it wouldn't be easy. Water is denser than milk fat, that's why cream rises to the top in non homogenized milk so if you use a higher percentage fat milk like half and half or heavy cream you will likely have a better chance. Interesting question, I'll have to give it a try sometime.

Admittedly we have seen some issues over the yearsbut that's the case with every single manufacturer we deal with. One thing that we look at is return rates and the ECM synchronika is very low, that's an indicator of customer satisfaction for us.

If you are using the softener and changing it every 100 litres or so you don't have to descale, the water should be soft. Keep an eye out for any signs of scale. White build up on your hot water wand or in the tank are signs. If you see something give us a call and we can help.

Agathorn the pressure can be adjusted using the PID and the steam can also be changed. Many home users prefer the slower speed because it is easier to handle. But if you want more it is certainly possible.
I found switching steam tips can have a huge impact on how powerful / fast or slow the steaming works, I actually prefer a smaller two hole tip on my machine (Rocket) which has a lot of power and usually steams too fast, the smaller holes than the default steam tip steam a lot slower but allow me to get better results for the milk foam.
The LMLM has Marzoccos saturated group but otherwise the Synchronika is more fully featured. It has full digital pid control over both boilers whereas the LMLM has analog control over the coffee boiler and a pressurestat for the steam. The ECM also has a shot timer and it costs $2500 less
ecm synchronika gives you basically all you need in terms of steaming milk and making espressos. More important is buying a really good grinder like the Mahlkönig k30 !
Both machines have double boilers and temperature control over the coffee boiler. However the control on the Linea Mini is analog, you use an adjust wheel at the side of the machine. The Linea mini also has a pressurestat to control the steam boiler while the ECM has a solid state relay and pid control over steam as well. The Synchronika's pid is also a shot timer which is another additional feature. Synchronika comes with two Porta filters and a plumb in kit whereas the Linea Mini has a single portafilter and the plumb in kit must be purchased separately. La Marzocco has a saturated group and the ECM uses an E61. The price difference is also almost $3000 CAD.
I think that the grinder has a larger impact on the end result in the cup. I would save the money and invest it in a top end grinder personally which will have a more dramatic impact on the taste than the machine.
The temperature in both the steam boiler and the brew boiler are controlled using the PID. Just press the arrows up and down to adjust to your desired temperature.
Mary Ellis truth be told the single is always a challenge. At the shop and at home I only use the double. You usually have to grind finer for single shots and even then they are not the same. Thank you for the suggestion though, maybe we will shoot a video on single baskets in the future

The ECM is priced a little bit higher than competing machines but not drastically so. I haven't seen any dual boiler machines with rotary pumps on the 2000-2200 range (although I am talking Canadian Dollars)

Chris Rizzo The Titan is faster and more powerful whereas the Ceado has a larger but set. It has 83mm burrs vs 64mm

This machine was my first choice, but too expensive; bought a single boiler ECM Classika.

ah ok i was doing 14 in my double and looking for 28g out which was not giving me a lot for a double shot i guess 16 would be better
