Just a small tip with the butchers twine, instead of just over/under once for the first part of the knot, if you do 2 wraps it'll hold itself and you won't need to use your finger to hold it until you get the second part of the knot done. Itll stay tight.
I must point out that you missed a very important step in the process. When it hits 120 internal temp, that’s when you should have grabbed your phone…. And dropped me a text saying, “ ALMOST DUN! GET OVER HERE!” 🤪. Nicely executed once again sir.

I didn't realize SnS Grills made a rotisserie attachment for their Slow'n'Sear Kettle!

No, mainly because I feel like a larger cut of meat can use a little extra salt. Especially deep down on a large cut.
