    I agree. I only found my grandpa when I was 25 yrs old and only had a relationship for 3 yrs before he passed. So, Kent, will you adopt me.

    Kent kinda touched on it but there is nothing as important as letting your meat warm up before it hits the grill. Obviously chicken and fish can't be left for long at room temp, but even a few minutes getting the chill off of them helps. Steaks? Yeah, you need 30 minutes to warm up to make the cook SO much easier and effective.

    Yeah under seasoning and over cooking is probably the biggest mistake people make!
    So these tips are great advice for any *season!*

      I used to tell my Mom to stop cooking things to death that are already dead. She would cook things so long sometimes that it lost all flavor no matter how much seasoning she put in it. Most foods can cook in minutes. Those foods don't need to cook over a hour to be done. Peas was her worst. They would almost be mush. Just taking them out of the boiler would break them up.
      You are right, it is often the worst mistakes a person can make.

    Here's a quick cleaning trick for an hot grill when you don't have a wire brush: a loosely crumpled ball of tinfoil, holding with a pair of tongs!

    Anyone know the name/make of the barbecue grill over his left shoulder? I need a replacement for my 15 year old Brinkman charcoal grill. They are out of business and most of the ones I've seen now are very cheap and flimsy.

    A mix of half lime juice half worstechire sauce with some freshly cracked black pepper is the best steak sauce ive ever had. Put a little on as soon as you pull that steak off the fire and watch it dissapear into the meat as it rests

    I've heard ppl say the onion works because it has sulfur and it oxidizes in high temp on the grill so it works

    i got one of those olive oil sprayers for the grill. I think it's for salads or some crap, but i use it to spray canola oil on the grill. And i use the oil from my little fryolator, so there's plenty of it, and i use it liberally on the grill. after i'm done cooking on the grill, i spray it with the oil then close the lid. Next time i use the grill, it's a nice shiny, seasoned surface.

    The best fire starter I've found is just a couple of pages of newspaper. Ball it up and soak it in cheap vegetable oil. Pile your lump charcoal on top. Works way faster than my chimney ever did.

    you can use pureed pineapple as a tenderizer. Turns Eye of Round into soft and tender steak. no more than 2 hours or your meat will literally disintegrate

    Hello. When I came to America back in -96 my now ex-husband used to grill but every single piece of food got completely burned on the outside and raw on the inside. He ALWAYS blamed the grill !! Those terrible foods were my first grilled foods I ate and I though how can people eat this stuff...boy it was Nasty !! Now I know better. It wasn't the grill it was the grill-er. We haven't got our grilling season started yet but it's so close. Our neighbors 2 houses away use that starter fluid and even the smell of it gags me. I like your tips. The lime, onion, thick pork chop. It's all good. Thanks Kent 👍👍

    Mr. Rollins, first let me say, in the kitchen, I am NOT a cook. I can burn water. However I thought I was a pretty good griller when it comes to grilling steak, chicken, pork chops, etc. But after watching MANY of your videos, I came to realize just how bad I was. I have and still enjoy your videos very much. I learn something from each and every one. And since I ordered some of your original and mesquite seasoning, WOW! Thank you so much for teaching me and millions of others your secrets.

    My dad knew how to do all this stuff. He was born in 1915. He served in WW2 as a bomber copilot /navigator on a 2-seater Martin B10 in Panama, guarding the Panama Canal from German ships and u-boats and Japanese ship (potentially) from Pacific theatre. Many people don't think about central America being a serious part of the war but in fact the Germans had naval forces in South America and they responded to u-boat and small vessels often.
    Some time later he decided to put his Army Air Corps jungle survival training to use. So he moved to the Smokey Mountains of East Tennessee ... at the time there was only one lodge just getting started on the top of one famous mountain near to what's now known as Gatlinburg.
    And the only way up was a hiking & horseback trail. Supply caravans took supplies up periodically in summertimes. He developed TB so he just survived in the wilderness for several years until he survived the TB.
    Eventually he met and married my mom and had 3 girls and was almost 50 when I was born. Every summer we spent a week in the mountains camping and cooking on camp.
    I still have my dad's USAAC machete.
    My dad would spend copious amounts of time camping and living in the mountains painting landscapes a photographing the mountains. He was born with raw natural art talent and sold the photos to news papers, and sold his paintings to tourists and local clients. Many local businesses and restaurants in Gatlinburg had his paintings hanging on their walls. He died before finishing a last painting from cancer in 1973. This is the anniversary of his passing.

    The best wire brush for cleaning a grill is the kind that welders use. You can find them in the tool section of hardware stores. They do not shed bristles.

    You need to use Bertha. You made some awesome ribeyes at that barn in Nebraska during a CAB event. The following night, we ate at Spencer’s of Omaha. Steak in he barn and that red bug juice was better than Spencer’s and fine wine. Even though I got the weight of that angus cow so wrong. I’m a real rusty farm boy.

    Shannon (I know you're the web guru of this outfit)... Can I ask a favor? You are kind enough to have a "printable recipe" link in the description of every video. It takes you directly to the recipe. Whenever I click on this link, that's what I want - the printable recipe. But as you scroll down you see at least one button that says, "Get Recipe". This is very misleading. This is a link to "My Recipe Finder". It has nothing to do with the printable recipe. To find that, you have to scroll, scroll, scroll through the narrative of the recipe before you find the actual recipe. Then you have to find the teeny, tiny "Print" icon/label.
    You and Kent are such high-integrity people that I know you wouldn't deliberately try to fool people to go to a site for one of your advertisers. This is probably an oversight - but one that you could easily fix. Please remove this button and instead you could put a link that clearly says, "My Recipe Finder". Thank you.

    @ Cowboy Kent Rollins, Kent my good friend & Christian brother, these are all great tips & i agree on no lighter fluid. I'd like to add a tip, Folks, i'm 57 yr. old irishman from rural Kentucky, cooking, hunting, fishing since i was 9, & all our cookware was cast iron or enamal coated cast iron. If you need to use your iron skillet in the house or on the grill, put the dry skillet in a preheated oven bake at 450 F for 25 minutes prior to using, double mitt when taking out of the oven as is screaming hot. Place on your grill or stove burner & cook away.( cast iron is a poor conductor of heat , but great retainer of heat, & can have cool spots if this process is not done) clean & season your cookware after it cools as per Kent's process, look it up on web site if you don't know cause keeps cookware in good condition, God bless all & stay safe.

    I have even used orange juice to marinade flank steak for an Asian dish that has a orange sauce.
    My uncle had a gas grill, and it always had an off taste to it like the gas putting out an odd flavor. He also never believed in #2 he swore cleaning the grill ruined the flavor....which did not help the odd gas flavor either. I haven't even used starter fluid nor briquettes for near 20 years. I tend to use an oak hardwood charcoal for most things.
    I usually use a rolled up paper towel, that I oil up to spread on the grill, it works better than spraying I think, I'll have to try the onion though, that sounds like it might be good.

    Another great fire starting method is to put about 2 tbsp of veg oil on a paper towel wad. Leave a side unsaturate, and light the unsaturated side, and put that under your chimney filled with your chunk charcoal or briquettes.

    A basically free quality charcoal lighter is just a piece of paper or paper towel with used cooking oil on it. It works as good or better than any of the commercial options.

    Kent forgot one thing...when using a gas grill and you want a controlled temperature...use lava rocks they sell them at Lowe’s. Best thing about them is you can turn down the grills flame and not burn what your cooking but retain the heat. Great for holding the wood chips too.

      @@gloriamahaffey5797 My gas grill originally came with metal heat shields that covered the burners.
      After a couple years they turned to rust. I found a grate on Amazon that fit right over the burners.
      The lava rocks sit on top of the grate. Hardest part was finding one to fit.
      They need to be the heavy duty steel ones like you'd use for holding charcoal not the thin wire ones.

      Gloria You know how you have your burners. Ok see the space from the bottom of your gas grill and all that space up to your burners. Just fill that space with lava rocks. So the burners and the lava rocks are about even. Dont block the holes where the gas comes out. Its ok if its close. Then your all done. I replace mine every year, and I use mine alot.

    Once I left the lid off the grid after cooking. After dinner I went out to the grill and it was a mass of moving raccoons. They cleaned that grill to brand new!

    I never use lighter fluid, make a small fire with sticks or small wood pieces. Even cheap charcoal will get going.

      Cowboy Kent was a fan of the late Justin Wilson just as I was years ago. Look up Justin Wilson's videos. They are fun to watch even if you don't plan to cook the recipes. His manner of speech was hilarious!

    A great way to keep salmon from sticking to the grill is to use a raw potato. Cut the potato in half. Just before you place the fish on the grill, rub the cut end of the potato really well onto the hot grate. The salmon will not stick to the grill.

    I use a big ball of aluminum foil with a set of long tongs to clean the grill grates. Don't have to worry about metal brush shards left over.

    Have used a small tin pan for sometime to ad wet wood chips to my gas grill. I just set it on top of the lava rock that is above my burners.

    If you don't like the taste or smell of onion, you can also use a turnip or garlic clove to clean the grill off. Garlic clove actually seasons better than onion.

    Hi Kent, Shan, Beag and Duker. Thank you for the grilling tips. I have tried the onion and works great. Also what I also use to clean a grill instead of steelwool is a newspaper. Not my first choice but works in a pinch. It is winter here in South Africa now but we still grilling, or as we like to say "Braai". Take care and thanks for the great videos.
