Belgian IPA Recipe and Tasting - Homebrew Jar of Destiny

  • The last Jar of Destiny beer of 2023 is Mike's Belgian IPA.
    Mike went with a combination of three hop varieties in there beer to try and create a balancing blend of earthy/nobel-like hops and some fruitier more modern hops. To that end Mike used Sterling, Cascade and El Dorado hops in this beer.
    The malt bill was a simple combination of Pilsner, aromatic and carafoam malts. Mike also used a pound of table sugar to boost the ABV without also upping the final gravity.
    At 7% ABV this beer was still incredibly drinkable and the ABV is almost imperceptible (check one box of getting close to Belgian-esque quality). The Abbaye Ale yeast from Lallemand certainly plays a prominent role on the nose and in the flavor. It delivers plenty of spicy-phenol qualities and it also seems to offer some complementary ester notes with the hops.
    The overall flavor really became a marriage of the three hops and the yeast together to make a pretty drinkable beer.
    Recipe:
    Recipe Overview:
    3.5-gallon batch size
    Brewed on the Brewzilla system
    Grains:
    76% Belgian Pilsner (7 lbs)
    8% Aromatic malt (20 Lovibond, 12 oz)
    5% Carafoam
    10% Table sugar (used for gravity increase and drying out)
    Hops:
    First wort hopping with Cascade and Sterling (60 minutes)
    Additional hops at 5 minutes: Sterling, Cascade, and El Dorado (2 oz)
    Yeast:
    Lallemand's Abbey Ale yeast used
    Mashed for 60 minutes at 154°F, ramped up to 168°F for mash out
    Gravity and Alcohol Content:
    Original Gravity: 1.066 (missed target of 1.072)
    Final Gravity: 1.015
    Alcohol By Volume (ABV): 6.96%

      would this style benefit from bottle conditioning Mike?

      Possibly. As it is an IPA I'd be very cautious about picking up to much oxygen during packaging. But done right it might be the best way to achieve higher carbonation rates that Belgian Ales are know for if you can't isolate one keg in a system of kegs with higher carb pressure. Cheers! -Mike

    I’m a fan on the JoD! It inspired me to try different styles as well. Made a Kentucky common and loved it.

    I remember buying an Ithaca “Box of Belgians” sample pack that had a White IPA and a Belgian IPA IIRC. I remember loving all four beers in there.

    I just brewed a dubbel with the Abbaye yeast. It’s bottle conditioning and I plan to try it on Christmas Eve. I’m really excited now after hearing what you had to say about the yeast. Merry Christmas

      I am inspired to try a couple Belgian style beers with this yeast in the future. Dubbel is probably a good one because you don't see them around too much any more. Its always Quads and Strongs. Cheers! -Mike

    Thanks guys! Belgian IPA is on my short(ish) list and I happen to have this exact yeast so you gave me some things to think about. Knowing the yeast provides a robust flavor was helpful so I'll probably push the hops a little more.

    A hop combo I like is Amarillo, Simcoe, Citra and Cascade.

    So Bizarre guys - I have a 21A Belgian IPA in primary right now...your JoD brews have aligned quite nicely with my own incarnations and schedule from a style perspective. (Maybe because we share the same name Mike lol) Cheers! - Mike

      I think it is. You know the Belgian part of this offered a nice twist to the palate. The whole commercial landscape is getting quite boring on the palate, but to make this at home allows one to explore the hops and not be bored (to some extent) with IPA. Cheers! -Mike

    You say you want more hop character, do you mean more dry hopping?

      Probably. But a little more on the hot side would also help out to balance with that yeast character.
