My husband is out of town this weekend leaving me all alone. So rather than eating out I am making the Caprese chicken😊 Cooked a few small potatoes in my instant pot and left over green beans and wow, a full elevated meal. Love it‼️❤️

Now after loosing my spouse and my Mom in 22’ I’ve found myself ina heck of situation I’m all alone and had a Gastric Bypass I don’t want to cook huge meals Although I need to eat healthy This is perfect and perfect timing As I’m finally getting it all back together and ready to get back into the kitchen and the garden soon.. Thanks so much for caring about people who just need a little help in the kitchen they use to run like a boss! Haha 😂 I’ve been lost in the kitchen and I keep wasting food I hate to waste food if you have insight on how to do that would love to hear I never had this problem before haha 😂Take Care Sheila
Think stir fries, using a 2 inch piece of pork tenderloin. Cut the rest of it in 2 inch pieces, wrap each individually and freeze in a freezer bag. Thaw pieces for fast meals. Fast, tasty, convenient!
For stir fries, cut the 2 inch piece of pork tenderloin into 1/4 inch logs, marinate in soy sauce, garlic, ginger. Saute in a wok or frying pan. Remove pork and cover. Saute cut up vegs, add Chinese seasonings. Add back pork. Serve with rice or Chinese noodles. Very tasty.

I always make the garlic chicken but I switched and made the chicken margherita - WOW! So good… I try them on my son and then if he loves them at home / he makes them at college! So easy!! Youre awesome! Thank you!!

After watching the video, I made the Caprese chicken with a side of rice and salad. This recipe was so delicious!!! Definitely going into my rotation. Simple recipes that are delicious, quick and not wasteful, cannot wait to try the others.

Left over Chinese stir fry can be stored in individual portions in fridge or freezer.
