    I Must say I tried this exact method and put half rice and half wheat flour and boiled it for 13 minutes after shaping it and it turned out very good it’s not as chewy as normal tteok but it’s a great way to make tteok from scratch without making a mess😂❤

    • @ModernPepper
      @ModernPepper  12 днів тому +1

      @@AylaAlnabulsi Hi 👋 Thanks for cooking with me. Btw, boiling for 13 minutes would make the rice cake too soft. As demonstrated, boil until it floats to the top then another minute or two. Then let it cool down on a strainer and store in the fridge so it hardened, creating that chewy texture. Also as noted, this homemade method will not be chewy like the store bought rice cakes that are processed through industrial grade machines (rice cakes are processed 2x or more through these machines).

    i made mine in a kenwood with a dough hook. all dry ingredients in the bowl and on slow speed kneading while adding water in parts. had to aid a little with a silicone spatula to get the edges and i did do the recipe double to make it easier for the hook to reach properly. might try a hand held mixer next time.
    all in all they came out soo good and im super happy. i have tried making some before from cooked rice and also from blending uncooked rice but these came out the best.

    • @ModernPepper

      Great question. Sweet glutinous rice flour is different from rice flour. Sweet glutinous rice flour comes out really chewy and more clear in color. White rice flour is less chewy and has more of structure/less mushy and more white in color. We use both to make all different kinds of rice cakes/tteok

      @@verkyjeonsel if let me give a clue to help u out , what is the difference between plain rice flour and glutinous one is the amount of Amylopectin which is usually found in any sorts of starches
      Its molecular structure consists of 24 types of monosaccharides intertwined in each fibrous tissue so that once it's tempered they become messy like easily sticking to ur hands and I'd like u select potato starch or tapioca not cornflour to make it more sticky..
      Good luck mate 👍

      For a softer taste, just cook it a bit longer or let it sit in the sauce pan without any heat on, for a few minutes longer

      Hi👋 I understand how u might feel about the ring. FYI - Precious metals detracts germs. I always wash my hands with antibacterial soap and thoroughly dry my hands before cooking. Now, I’ll leave it up totally viewers at home to practice their own sanitary preparations.

      Hi 👋 I understand if my rings are not to ur liking. For me, these rings are meaningful with sentimental values from my family.
      FYI - Precious metals detracts germs. You can Google it. I will leave it up to the viewers at home to decide on their cooking prep (i.e. wearing jewelry, how they wash their hands, prep the cooking areas…etc). As for me, I thoroughly wash my hands with antibacterial soap and thoroughly dry my hands with a clean towel before I cook. I am comfortable with my sanitary prep, and you can practice your own sanitary prep before your cook. FYI - Many professional chefs kitchen staff wear their rings.
      I think you’ll be happier with other Korean cooking channels. Thanks for visiting my channel🙏
