- SNOW FUNGUS SALAD or Yum Talay is one of my all time favorite party tray foods! This dish takes some prep but once everything is ready, it comes together in a snap!

RECIPE
2 heads snow fungus, prepared
1/2 small red onion, thinly sliced
1/2 small red bell pepper, sliced into thin strips
2 carrots, shredded
steamed pork loaf, sliced into strips (I used 1/2 loaf)
cuttlefish, prepared
shrimp, prepared (I used 20 pieces)
RECIPE FOR THE SAUCE
2 tablespoons palm sugar
2 tablespoons warm water
2 thai chilies, crushed
2 tablespoons thai chili paste
1 tablespoon chili garlic sauce
4 bulbs pickled garlic, sliced
2 thai chilies, crushed
1 tablespoon lemongrass
1/2 tablespoon white vinegar
2-3 tablespoons fish sauce
pinch salt
1/4 teaspoon chicken seasoning or msg
lime to taste

Growing up, I loved ordering the Seafood Diablo from Benihana because it had snow fungus stir fried with the seafood and noodles on the teppanyaki grill. I loved the crunchy texture and the way it picked up the spicy sauce. I didn’t know what it was back then, and Benihana eventually took it out of the dish. Well today, I serendipitously ordered this exact salad at a local Thai restaurant instead of the Papaya Salad, which wasn’t in season. When I bit into the snow fungus, a wave of nostalgia hit me.
Snow fungus seems like it would be exotic for Benihana! I was going to say, I’ve never seen a seafood dish on the menu. I’m glad you were able to rediscover it. It is easy to prepare too in case you ever want to recreate seafood diablo 🤍
I've only just bought and tried Tremella mushroom or snow fungus.
For people who've never tried it and are curious. To me it closely tastes like morel mushrooms. We love it an stir fry pork.
I ended up getting a huge bag of it and am going to seasoned flour and fry smaller pieces in butter to see if it really tastes like morels cooked that way.
I was advised to lightly blanch the snow fungus too by the woman at the store.
I plan to keep this in my pantry for adding to all kinds of dishes.
It went great with the other mushrooms I've picked up. Shiitake and wood ear.
But I love mushrooms.

I'll have to try this variation of the fungus salad. The pickled garlic sauce looks delicious

Great vid. Will have to try your take on this dish. Have made before tho w/diff sauce (lime, fish sauce, larb powder) and w/naem sausage. Question- any particular reason for blanching? Have only ever soaked then rinsed well under hot water. Thanks!
Yum! That sounds like a completely differently salad. I love naem sausage. I may have to try! No reason for blanching. My mom always did it so I do it too (sane with the pork loaf). I think as long as it’s reconstituted and cleaned, you’re fine ☺️
Do you still have the other yum talay recipe that used the sweet chili sauce as a short cut for the sauce?

Very interesting. I have never heard of this dish before and I also have not seen, or heard, of a few of the ingredients either, but I love that it is supposed to be a somewhat spicy dish and that is always a plus in my book haha.
