We’re excited to introduce the first episode of Japan Taste Makers: Chef Spotlight Series, a new byFood series where we enter the world of Japanese culinary masters. Join us as we unravel the culinary secrets of Japan's top chefs, exploring their innovative techniques, traditional inspirations, and the artistry that defines their craft.
Embark on a culinary adventure with Chef Kamikura, the extraordinary tuna master from Iiyama, Nagano. Chef Kamikura's journey, from envisioning a teishoku restaurant in his youth to evolving into a sushi virtuoso, is undeniably inspiring.
With a commendable six-year tenure at Ginza Kyubey and experiences at other esteemed establishments, Chef Kamikura proudly inaugurated Nishi-Azabu Kamikura in July 2011, marking 2024 as his 30th year in the sushi industry. He meticulously crafts an alternative-style chef's course at his restaurant, using the finest ingredients sourced from Toyosu Market.
Specializing in rare tuna cuts, Chef Kamikura's creations surpass the ordinary. Ranging from red meat to medium and fatty tuna, each visit guarantees a distinctive and unparalleled gastronomic experience.

A proper sushi restaurant like this is not something anybody can simply replicate without undergoing years of training. Nothing like pizza or burgers.

This video would have been more enjoyable if Shizuka was on it
No Shizuka 😒
She will be back next week 🤩
Voice-over translation should be used because trying to read the caption that disappears too quickly AND watching what is going on is impossible. Not my favorite video.
