- Ingredients:
Pork belly 800g
Shiitake mushrooms 10-15
Spanish onion 1 half
Boiled eggs 5 or 6
Yellow rock sugar 2-3 small pieces (or white sugar)
Cooking wine 1 tbsp
Soy sauce 2-3 tbsp
Dark soy sauce 1 tbsp
Oyster Sauce 1 tbsp
White pepper 1/2 tsp
Spring onion & Ginger
Star anise, pepper
Cinnamon stick & bayleaf
Salt
Green Veggies (optional)
Steps:
1. Cut the pork belly, presoaked mushrooms, spanish onion into small pieces;
2. Blanch the pork belly pieces in cold water, once boiling remove the foam;
3. Drain the meat and keep the broth;
4. Caramelise the onion mince;
5. On medium heat, add ginger and stir fry the blanched pork until pork fat is coming out;
6. Add in the mushroom mince, cooking wine, soy sauce, dark soy sauce and oyster sauce;
7. Add in the caramelised onion, spices and spring onion;
8. Add the boiled eggs and broth, the amount of the broth should submerge all ingredient;
9. Add in the rock sugar;
10. Simmer on low fire with lid on for 40-60mins or until the meat is tender;
11. Check and stir from time to time;
12. Remove the lid to thicken the sauce, add some salt if required;
13. And it’s done! Serve with rice and green veggies and Enjoy!
