  • This is a gorgeous mid week pasta supper, full of delicious summer flavours - aubergines, tomatoes, and basil. The almonds and cheddar crumb bring a great crunchy texture to the pasta. It's so easy to make, takes about 10-15 minutes to prepare. Hope you enjoy! Clo xx

    You are a Gem!!!!!! I made this for my family and they loved it!!!! I also recently made some of your recipes you did on Rachael Ray. The tots with that dipper with sour cream, mustard and malt vinegar. Amazing:) Thank you so mucn.

    I'm going to have to try that.
    I would love to see you cook some sort of summery egg breakfast dish that I can also get my kids to try. They love eggs but want to try something different with a summer twist😊

    Beautiful video! I can't wait to make this gorgeous pasta dish! I would love to see you make something egg based, as I love eggs, and think they are so versatile. Also, have you tried soaking fruit and veg in a baking soda/water bath? That really does the trick of getting any wax or other impurities off of the skin.

    I think the Summer Pasta Bake looks lovely. I will soon have eggplants from the garden as well as cherry tomatoes. I have a questiion about Dubliner Cheddar Cheese..........we have Dubliner Cheese her in Canada but I don't think it is cheddar.....I thought Dubliner was the type of cheese and the brand name. It doesn't taste like cheddar to me although I love it!! Having said that shuold I use it or buy an acutal aged cheddar??????????????????

      Hi Susan! So glad you like the pasta bake, and so lovely that you have eggplants growing in the garden! I have just started my vegetable garden, are they hard to grow? Would love to try growing them. Dubliner is the name of the cheese and yes cheddar is the type of cheese. Maybe cheddar in Ireland is slightly different to the ones in Canada? Clodagh x

    I say buttery Soda Bread and Gravlax, if for no other reason than to seed the combo in people's minds as it was a fantastic accidental discovery a couple months back.
