INGREDIENTS
For the rolls:
- 5 large eggs
- 1/2 cup warm milk (110-110°F)
- 2 tbsp neutral oil
- 1/2 cup sugar
- 5 cups all-purpose flour
- 2 1/4 tsp instant active dry yeast
- 1 tsp salt
- 1 cup butter
For the filling:
- 5 tbsp butter melted
- 1/2 cup brown sugar, lightly packed
- 1 tbsp cinnamon
For the frosting:
- 8 oz cream cheese, room temperature
- 4 tbsp butter
- 2 cups powdered sugar, sifted
- 1 1/2 tsp vanilla extract
- 2-3 tbsp whole milk
INSTRUCTIONS
For the cinnamon roll dough:
- In the bowl of an electric mixer, whisk the eggs to break the yolks. Add the milk, oil, and sugar. Whisk to incorporate. Add 2 cups of flour and yeast. Using the dough hook or by hand, mix the dough to incorporate the flour and yeast. Add the remaining flour and salt. Knead until it pulls away and cleans the side of the bowl but is slightly tacky, 6-8 minutes.
- With the mixer on medium-low speed, add the butter 1 tbsp at a time, allowing the butter to fully incorporate before adding more.
- Once all of the butter is incorporated, the dough will be smooth and elastic. Place the dough into an oiled bowl. Cover and allow to rise in a warm area until doubled in size, 1 to 1 1/2 hours.
- Once the dough has doubled in size, punch down to remove the air. On a lightly floured surface, roll out the dough in a rectangle measuring 18×16 inches.
- Brush the melted butter over the dough. Mix the brown sugar and cinnamon together and sprinkle evenly over the melted butter leaving ½-inch on the long side. Roll up the dough tightly towards the side with no sugar and pinch the seam together. Roll the dough onto the seam and cut into 12 equal rolls. Set individual rolls in a greased 9×13 baking dish and allow to rise in a warm place for 1 hour or until almost doubled in size. While rising, preheat the oven to 350°F.
- Once the rolls have risen, place them in the preheated oven. Bake until the rolls are golden brown and the temperature reads 190°F in the center, 30-40 minutes. Remove from the oven and cool. While the rolls are slightly warm but not hot, frost and serve.
For the frosting:
- In a medium bowl, combine the cream cheese and butter. Beat until smooth. Add the powdered sugar, vanilla, and 2 tbsp of milk. Beat on low until smooth, and adjust with more milk as needed to achieve the desired consistency.

I have to (sort of) disagree about the frosting. I LOVE when it melts into the rolls, but not all the way. America’s Test Kitchen came up with the perfect solution: spread half of the frosting onto the rolls immediately after they come out of the oven. Then about 10 minutes later, spread the rolls with the rest of the frosting. It’s the best of both worlds, some melted into the roll, the rest standing proud on top. Thanks for the recipe, Kaleb!

I have a confession...I'm a bread/yeast virgin. I have never made cinnamon rolls/bread or worked with yeast for that matter. But I'm SO going to make these! Looks like an easy enough, simple-to-make rolls/bread recipe to try for my very first attempt. This could be opening up a new avenue for me!

I have always given homemade cinnamon rolls at Christmas to family and friends. I've got several recipes I use. I'm definitely going to add this recipe to my rotation! And...I use a LOT more frosting & butter the rolls as eating (doesn't everyone?!) THANKS for another great recipe!

I received a kitchen aid mixer as a gift but I bought a different mixer and I like it over the kitchen aid
The mixer I bought has a pasty blender and work fine but If I had to buy a different mixer I wouldn't be buying a kitchen aid there is a price difference but far less than what kitchen costs
Kitchen aid doesn't have the same power as kitchen aid spins to fast
Kitchen aid has a lot of atchements that my purchase doesn't have if my kitchen aid dies I will be buying it
There is a moderate price difference if both fail at the same time I will replace the unit that is not kitchen aid
Would I buy buy a kitchen again again if I couldn't get the other one (yes) but definitely I will ask for a better price

I just bought a new stove and it has the proof setting I haven't tried it yet. Wondering if you have any hints on how to use it. I do notice you just slightly warm your oven. Just thought I'd ask. Your Cinnamon Rolls look DELICIOUS.
Mine has one and I’ve used a few times but I prefer putting a pan of boiling water in the oven bottom rack in the back and turn the oven of 200 and then shut it off and put my rolls or bread in and for me it’s been no fail
Can I make up to the point where I cut and roll them then put in the pan and in the fridge overnight and bake the next day? Thanks
