I made Spritz cookies for my Mom this year. I found the same model of gun from the 50s or 60s that got passed around the family when I was a kid. The recipe that I have is very similar to yours, but includes almond extract (½ tsp). I dipped my cookies ½way into melted chocolate then hit them with sprinkles. I'm happy these cookies are still being made and enjoyed.
I use to live among a lot of Italians when I lived in Australia as well as Greeks. I remember these cookies. My Oma use to make some traditional German cookies as well. If only I could bake and make minestrone soup that didn't taste like canned tomatoes with vegetables. Nobody likes my baking. My Italian neighbors made really delicious food as did my Greek friends and their family.

My kitchen is still rocking a passed down Mirro aluminum cookie press. I also like to make peppermint flavored snowflakes and lemon flowers with a raspberry jam dallop in the center.

Yep, this weekend is Christmas cookie weekend! My wife is doing the spritz cookies but I'm trying my Mother's original sugar cookie recipe from her 1950's cookbook. Can't wait!
My mom was an expert spritz maker and there are two things you are not doing right here: 1) use only egg YOLK not whole egg. The proteins in the egg white make the spritz tough, not tender. 2) bake them until SET but NOT brown. They should not be brown on the bottom, just "done" a little tan on the edge. It is exactly 8 minutes in all, 4, turn the pan and 4. Watch them like a hawk.
