Been loving this series for a few weeks now, explained very well. I love 3 blade stockman knives for this very reason, you can have different blades finished for different cutting tasks. I like 2 blades with less refined edges and one finished on a transluscent. It is more than i have ever needed. I always say, sometimes you need a razor blade and sometimes you need a crosscut saw.
absolutley! my vicorinox tinker usually has a normal 325 grit edge on the main blade with pretty steep bevels and the factory grind, and the little blade has a lot leaner grind, very shallow bevels and still the 325 grit edge, but it is reseved for delicate work.

I agree 100%! For what I do...cooking/outdoor work...I rarely finish above a soft Ark. I also tend to use stropping compound on the coarser side to retain "tooth". My current favorite is Bark River Black. For meat cutting, I wouldn't want anything above 400 grit. If you haven't got "tooth", the "silverskin" on a muscle will stop a highly polished edge dead in its tracks and can wind up cutting the meatcutter.

the edge off a well maintained soft ark is a beautiful thing. if I could not have my favorite dmt or smiths 325 grit edge, that soft ark is the one I would probably pick!
How about for salt water dive knife? Last time corrosion destroyed the edge causing deep chipping when I tried to sharpen.
i dont know much at all about salt water and knives. here in wyoming there isnt much salt water.

For the cleanup, I use an eraser for my diamond stones, sometimes with alcohol. What do you think?
i think if it works, then its a good thing! I usually use a toothbrush and dawn in the sink.
